Answer: It is indeed milled dried garbanzo (chickpea) flour, so yes I would assume you can make hummus by adding the appropriate liquids and oils. I used it to make chickpea fritter or panelle as they call them in Italian, which you would not be able to make from whole fresh chickpeas. As hummus is a moist composition, I would think that fresh garbanzos or chickpeas would be your best option rather than the four.

Answer: I did a little math just now, because I recently retired all my canned pulses, and switched exclusively to dried (reason: vastly better texture, better taste, better shelf life, 3-5x cheaper, and no BPA ... a WIN-WIN). A common rule of thumb is 1 cup Dried Garbanzos yields slightly more than one typical 13.5-15.5 oz can (cooked), but since it's a nice round number that's easy to remember (1:2), it's commonplace to equate them ... but it's probably higher, since many budget brands dont fully fill their cans (possibly because labeling laws in the country of origin only require "net weight" rather than "dry" {drained} weight").I have no data on Palouse chickpeas, but I measured some generic garbanzos just now ... * 1 cup Dried Garbanzos (Generic) = approx 200 gr dry wt = 0.44 lb. If we accept the 1 cup = 1 can equivalence mentioned earlier ...* 5/0.44 = 11 - 12 cans, minimum (but probably closer to 15-16)------------------------------------BTW, just for price comparison: If you're looking for organic non-GMO pulses like garbanzos, $3/lb seems fairly commonplace for 3-5# size online for most varieties, whereas in my local indo-pak store (where garbanzos are called "Kabuli Channa" in Hindi), unrated generic bulk repackaged by the store in 3-5 lb bags generally costs about $1/lb (or a smidge more), and premium organics double or triple that.
