Answer: Hi there, Good question, especially with the store shelves being stripped of every single bean. It is said the shelf life is 1 to 2 years. I personally have found they last about a year. After that, they get so hard and dry they just won’t cook. Ive tried to cook old beans myself and after12 hours and they were still like rocks. I didn’t add salt because that can also cause beans not to cook. So I would recommend using them within a year. I cook a large pot full when they are fresh and then freeze them. You could probably can the cooked beans too, I haven’t tried that yet, you probably need a pressure canner, they are likely considered a low acid food. Hope that helped.

Question: How big are the beans after you cook them? I once found lima beans that were quarter and silver dollar sized after they were cooked. So yummy
Answer: Hi there! the problem may be with the nutritional facts image is for a different product. This is an error from the seller. They sell GF mix and GF KETO mix. The Keto mix has 12gms total carbs, 7gms fiber and 1gm of Erythritol. To get “real” carb count, you subtract fiber and erythritol (8) from 12 and that leaves 4gms total carbs. So bottom line, the image depicted is wrong but there is a second image that is correct. Make sure you are looking at the GF KETO mix this will make sense. Hope this helps!
