Answer: | I followed the instructions and used 1 cup of milk for 1 tbsp of grain which worked perfectly from the get-go. I had creamy kefir in 24 hours. The grains grew every day, approximately doubling in size every 2-3 days and I would increase the milk by half a cup every day until I reached a quart of milk. At some point the kefir became less creamy and more soupy. I would then play with the amount of grains by removing a portion of it and blending it into the kefir, but I always used 1 quart of milk to approximately 2-3 tbsp of grains, sometimes more, sometimes less, I wasn't too exact about it. Now that the weather has warmed up, my kitchen is eighty degrees because it faces south. In this environment I only need half a teaspoon for a quart of milk that becomes beautifully creamy/custard-like in 12 hours! |

I received mine during summer via USPS and they were warm so I kept them in the refrigerator for 5 days and then started the activation procedure as directed (using store pasteurized whole milk for 1st four batches) and now make a quart every-other day now. I get raw milk to use and let stand in glass Ball quart jars with cheesecloth or linen caps held on with rubber bands. Mine set for @ 24 hours when kitchen cabinet is above 75 degree F, and up to 36 hours from 65 -75 degrees. When the whey separates out (semi-milky liquid) to the bottom; which, can be stirred back into the kifer, at this point I cut back the time by 2-4 hours. To get a thicker cream I let set for 12 - 24 hours in cabinet (out-of-sunlight) to pour over frozen fruit with a drizzle of honey/maple syrup, it's better than ice cream! Use cream kefir for smoothies (milkshake style), scrambled eggs, oatmeal (hot) cereal etc.. Regular kefir I refrigerate after separating out grains for drinking (w/honey or maple syrup), cold cereals, regular smoothies, cooking & baking (for baking increase by 25% for milk amount with organic whole wheat) but watch during cooking time and adjust baking times accordingly. My last A1c test for diabetes was normal for the first time in 10 yrs with medication reduction and my obese son has lost 60 lbs in less than 1 yr with diet change w/exercise routine. I also make kefir cream cheese dips(s), cheddar cheese and trying other foods with kefir. Recipes included via email are what I primarily use as my guide. |

Answer: | If you can find a local source for Organic Raw Milk. Raw Milk still has all of the goodness still in it, especially the enzymes because it makes the best kefir. You just must know your supplier, how they feed and care for their cows and that their facility is clean and sanitary, I can not emphasize this enough!! I have been drinking Raw Milk from an Organic Amish Farm for many years and have never had a problem. The biggest problem with Raw Milk, is that once you taste it you will never be able to drink the white liquid sold in stores that is called milk.As far as Organic Milk from the supermarket, I do it recommend it because it does not make the best kefir. One of the biggest reasons is that virtually all Organic Milk sold in stores IS Ultra-Pasteurized, it is very seldom labeled as such but it is. Milk, once processed (pasteurized) has an approximate shelf life of 10 days. If any milk, (including Organic Milk) half & half, heavy cream has a shelf life longer than 10 days it has been Ultra-Pasteurized. To Ultra-Pasteurize Milk it milk be heated to about 275 degrees. NOTHING good that was in the milk is able to survive this temperature!!!If you do not have a safe reliable source for Raw Milk then use regular whole milk from the supermarket.I use a 2 quart Mason Jar which I cover with a coffee filter and a rubber band. You will want to start with a 16oz Mason Jar, and as your Kefir Grains multiply move to larger containers until you have all the kefir that you need. Then donate your excess Kefir Grains to a friend!!I also agree with the person that recommended going online and reading. There is a lot of good information out there and follow the directions that come with the grains. I used Raw Milk from day one with the grains and never had a problem, even though Raw Milk is not recommended for your first batch or two of kefir. |

Answer: | Hi! The first time I used a culture starter, it did not work as expected either. I used coconut milk, let it sit in a dark place with a temp of 72 F, for 18 hours. It did not seem to work. I put it in the frig and I called Cultures for Health. They told me to take 1/4 cup of this milk and start a new batch with new milk. I did so and then waited for 24 hours. It did smell a bit yeasty and tasted sour and thickened some. So it worked. I did 4 batches , keeping 1/4 cup of cultured milk and starting a new batch each time (no new starter needed). It's best if your milk is not too cold to start with, the room temp is 72 F and above, a dark place, and leave it for 18-24 hours. After the first batch it took maybe 12 hours to work. Question: | After straining there was a clump of darker slimy tissue looking thing with some kefirs attached. Is this normal |
Answer: | Kefir can have all types of different appearances and your personal kefir will even change its appearance from time to time (usually with the seasons/temperatures or because you haven't fed it enough but even with different types of sugar or brands of water). I would suspect that it either got too hot or cold while being mailed and that is compounded by already being in a state of stress from not having been fed. The only way to know for sure if yours is good is to try to use it. Feed it 1/4 cup brown sugar and 1 quart of nonchlorinated & nonfiltered water to 1/4 cup kefir grains. You should probably dump the first batch or two anyway as the kefir are stressed (they weren't in "your" liquid either so there's no way of knowing how exactly they were kept). You can always rinse the grains with water (again non chlorinated and non filtered) after dumping the first couple of times if you're afraid anything is off (you shouldn't have to continue doing this - rinsing is unnecessary and you end out loosing baby kefir in the process). Feed it every 24 hours for the first couple of days whether they have eaten as much sugar as you'd like or not (helps make them less stressed). After a couple of times it should be safe to drink. It'll smell slightly funky and tart (kind of citrus like). If it smells like acetone you have something wrong (grains that are still stressed or are sick) and I would contact the seller. If it smells/tastes like sugar water your kefir are probably not viable (you should also be able to see little bubbles in your fermentation container an hour or two after feeding them). Otherwise you're good to go. They really do change appearances from time to time so it may be nothing more than temperature and stress. Mine were a little slimy looking the first week or so. Then they changed to looking almost like little chunks of yeast. Months later they're now like big clear rocks. All the same kefir kept the same way and fed the same thing. |

Answer: | You will need sugar and purified water. I have used reverse osmosis with no ill effects. Oh, and I use a metal strainer all the time. Kefir grains have no problem with a stainless steel strainer. Just make sure it's not aluminum. Although, I don't know if that will have any effect either. i do add about 1/4 tsp of molasses when I'm brewing along with a 1/2 tsp of baking soda as well as some coral calcium. This makes the kefir very happy. However, if all you have is a stainless steel strainer, use it. I've been using mine for years and I have to give away kefir grains every few weeks. |

My wife doesn't like the raw milk so I drink between 2-4ozs a day. If you are a beginner DON'T drink more than 4ozs to start it will clean you out quickly. :) |

Answer: | These are milk Kefir grains. All you have to do is put them in a cup (glass preferably), add milk and wait 24 hours. The next day, strain them and you will have delicious kefir to drink. Simple! |

Answer: | Did you just receive the grains or are they active grains? Usually it take a week or two after shipping before the grain becomes fully active. You need to follow the instruction that comes with the shipping. Also, what is the proportion of milk to grain? If you have too little grain, it will take longer time. I use whole cow milk, and about 1:4 ratio of grain vs milk, and it takes 24 hour in room temperature (70'F) to get good kefir. Hope this helps. |

How to Make Yogurt at Home
To enjoy yogurt, you must have whole milk first and a right starter, which is actually a blend of yogurt bacteria. For this, any kind of milk will do. Cow, sheep, goat, even buffalo milk is more than perfect for making yogurt. Yogurt is made through a process called fermentation, which will modify the structure of the milk. The fermentation of the milk takes place when the good bacteria in the starter trigger fermentation. Please be careful as not every brand of milk can supply the right set of nutrients for bacteria, but any bacteria can thrive in the perfect environment, which you’ll need to create. If you want to enjoy yogurt at home, here are a few easy steps to follow.
Pick up carefully your base products – whole dairy or soy milk with no additives and preservatives.
- Boil the whole milk first. This will kill all kind of non-yogurt bacteria in it and evaporate the water in the milk.
- Cool the milk down to a lukewarm state in order to start the fermentation process. Somewhere between 40 and 45 degrees Celsius is the ideal temperature, which will make the bacteria thrive and start producing your yogurt. Just touch the container with the milk and if you feel it ‘’warm’’ this means that the temperature is ideal.
- Introduce the bacteria, with the help of the starter, into the milk and stir gently.
- Next, allow the milk to sit in a warm and protected place, without bothering it for a while. During this time, the bacteria will work and will process nutrients, and will separate the milk’s sugar, called lactose, into simpler components for easy absorption by your body. Lactic acid is also produced meanwhile, which gives the yogurt its well-known acidity.
- How long will the incubation take? The term depends very much on the met conditions, so it can be finished overnight or it may take another day. The time for incubation varies and depends on the used milk, yogurt-making appliance, although it should not take more than 24 hours if you use starter and milk, and will take just 3-6 hours if you use ready yogurt as a starter.
- Make sure to check the yogurt and see when it has the consistency you desire. Still, do not allow the yogurt to ferment for more than 2 days because it can get way too sour if the bacteria multiply too much.
- Once the fermentation process is complete, make sure to store it in the fridge, so you will stop the bacteria from multiplying and ruining the taste of your yogurt. If not stopped by a cooler temperature, the bacteria will continue consuming the milk, until its food source is depleted, which explains the spoiled taste yogurt can get or the visible separation of the milk.
Also, don’t forget to reculture the next batch of yogurt with 2 or 3 spoons taken from the existing yogurt, for every litre of milk, so you can enjoy yogurt as much as you like. Do remember that re-cultivations made by using ready yogurt and milk need 3-6 hours of fermentation only as the quality in terms of texture and taste are even better.
As you can see, it is not rocket science to make yogurt at home. There are just a few simple rules to follow in order to enjoy yogurt as much and as often as you please.

Myth or Not? Many people ask if it is true that the famous Lactobacillus Bulgaricus bacterium is found only in Bulgaria. The correct answer is no - you can grow the bacteria in different parts of the world (in fact many people do). What is unique about the Bulgarian strain is that only in Bulgaria it preserves its qualities in further generations of the same strain, i.e. if you use your previous yogurt to start your new batch. If this is how you make your yogurt outside Bulgaria, you will notice that after a batch or two, the yogurt loses its unique taste, physical appearance and qualities. Why this happens, scientists are not sure. It is often contributed to the unique climate of the region but there's more to creating the perfect conditions for Lactobacillus Bulgaricus than the environment. So how can you prepare Bulgarian yogurt abroad? The answer is simple - use a dried-freeze yogurt starter culture with live Lactobacillus Bulgaricus that was produced in Bulgaria. Use a new culture with every batch of yogurt you make to preserve the unique taste and qualities of the yogurt. Answer: | i'd say more on the indefinite time period, if well cared for. you can keep them "incubated" in the fridge for a time but you need to make sure they have enough food. These grains that I purchased from here are doing amazing!!! best grains by far. they are huge and healthy and have quadrupled in size and amount. I go about every 4-6 days in between changing the water out and adding sugar/fruit for it's food source. |
