Answer: Although there are some offset smokers that are designed to allow grilling on the offset box directly over the coals, this one is not that way, smoker only.

Answer: Smoker is 36"X16". Wood box is 14"X12.5". Both are 15" deep. This smoker did an amazing job on a batch of fish I recently did. No lack of smoke from this one.

Answer: My opinion is just turned around from these others, in that once meat reaches a certain temp, usually within about two hours, it will not add any more smoke flavor. Depending on what type of wood your using, hickory being one, you will give your meat a bitter taste. So after using your favorite wood initially then I will switch over to only charcoal if I'm using my Weber or a white oak wood that is very mild to finish it up. Nothing like smoking meat for 8-10 hours and have it taste bitter and over powering. Perfect smoked meat every time for me is charcoal on the Weber with the soak wood chunks for the first two hours and nothing but just plain charcoal the rest. I buy the Kingsford charcoal on memorial and labor day when there two for one. Generally a 5lb bag of chunks will last me nearly a year. So these guys spending $100 to smoke what only cost me about $10 per session. Get the pork butt to 190 degrees, wrap it in heavy duty foil and let it go another 30-45 minutes wrapped, pulled pork every time. Follow these instructions and I'd put your meat against anybody's taste wise... and enjoy the compliments!

Answer: Probably not, depends on what you are packing it into. Camper maybe, not so much in a car. It stands 43" tall, so even if it is broken down to the main components you'll have 3 pieces 18" round.
Question: Is a chimney starter necessary or can one just use charcoal lighter fluid
Answer: Lighter fluid is fine if you use a fire source which gets easily to the charcoal deep in the barrel. Sturdy wooden matches are suggested. I recommend a chimney starter. They are an incredible investment which will provide two advantages: no petroleum scent to your grilled meal and a whopping savings of cash for charcoal. One of my chimney starters is now 26 years in service
Question: Does the charcoal go in a pan or on a rack? If on a rack, where do the ashes go
Answer: The bottom of this cooker has a wire rack inside of it where the charcoal is placed on but I guess you don't have to use the rack if you don't want to, and the ashes just collect at the bottom under the rack which you can easily dump out after a few uses.

Question: How would you compare the performance between 14.5 an 18.5? same amount of charcoal? same amount of time to cook? any diff in temp control
Answer: Have used the 14.5 a few times now (tri-tip, meatloaf, two hot-n-fast cooks with pork butts)...It's a pretty cool little cooker. Have several years experience cooking with a tamale steamer converted smokey joe. Thus far, I'd have to say it cooks similarly to those (with the added bonus of a water pan and door). It holds less charcoal than the 18.5, for sure. For the hot-n-fast pork butt cooks I had to lift off top/center sections and refuel...not too difficult, but something I don't have to do with the 18.5. Haven't really tried a true low-n-slow cook yet...can't say how long cook time might be under those conditions (have had good 6 hour plus burn times on the converted smokey joes). When I cook hot-n-fast, to be honest, I just let 'er rip...this little guy gets plenty hot, plenty fast. Obviously, there's less space in the 14.5, you can get a butt on each grate and that's about it. I don't use water when cooking hot-n-fast either, but the water pan is much smaller than the 18.5. I think I'm going to enjoy cooking on this, but If I had to choose one...I might choose the 18.5 (increased charcoal/cooking capacity). Lucky me, I've got both and a couple of 22.5's!! Hope this helps.

Answer: I have owned the 22.5" for a year and I can tell you that it is worth the purchase. It can hold any piece of meat that you can think of putting on it and it stays fired up for all smoke jobs. I have smoked whole turkeys, briskets, pork butts, chicken, and burgers/brats/dogs. I would say I've put roughly 25 smokes on it and I have never had any issues with it. I also smoke for 4 people generally. The 18.5" is going to be exactly the same thing except in a smaller form. It may not have the room you are looking for if you get a large cut. I have seen a lot of comments saying that the 22.5" uses more fuel and while that is correct it doesn't have to be filled to the brim for a smoke. I normally use a half ring and if I need a few more coals I just throw them on. Never had an issue with it. I would rather have the size and not need it than regret not getting the extra room. If this is well taken care of it could last for several decades so what is the big deal with spending an extra $100. Just my 2 cents.

Answer: Only if you truly hate yourself. I own this model and love it as a smoker, but it is not a grill. The bottom grate in the main cook chamber is non-removable making cleanup impossible other than with a wet-dry vac. Do NOT try to direct grill with this unit! There are other units that have removable coal beds in the cook chamber that are ideal combo units.

Answer: Stay away from smoke boxes, they're junk! they will fail every time due to the lack of oxygen that they need. This smoke tube works great and will smoke for 5-6 hours when completely filled, highly recommended for those who like extra smoke without having to constantly relight after 15:00 minutes.
Question: What temp and how long in the oven to burn off manufacturing oils
Answer: I just washed mine with Dawn and fired it up. Worked fine
Question: Will this keep smoking at high altitude
Answer: Yes! I am at 7,000 feet and this works very well. If it is over a lit section of the grill, it will burn faster and produce a ton of smoke. Over a "Cold" section of the grill and it will last over 4 hours.
Question: Can this be used in the vertical position
Answer: This is a very good question and is my pleasure to clarify it! I know sometimes, it could prove more convenient if the tube could just be put vertically in the grill or smoker. Unfortunately, in most cases, this will not work, because the ashes resulted from more and more burnt pellets, will suffocate the fire - it will simply not have enough oxygen to keep going. Definitely not recommended to light it from the bottom - as it will burn very very fast and ruin everything.
