Question: How durable are the plastic handles
Answer: Assembled in USA so probably means parts are imported.
Question: is there a cleaning process best for the sharpener after it's been used? theres a good amount of dusting i'm seeing build
Answer: I have been going back and forth with Chef's Choice Customer Service until I'm pulling my hair out. First they tell me that the honing stages of the 463 and 464 are the same angle as the sharpening stages. Then they tell me that they are NOT the same. BUT THEY WON'T TELL ME WHAT THE HONING ANGLES ARE. They also told me, believe it or not, that the honing stage on the 4643 is for 15 degree Asian knives ONLY. The manual contradicts that and clearly states directions for sharpening both 15 degree and 20 degree knives and for honing and polishing BOTH 15 and 20 degree knives in stage 3. So I don't know if the honing angle for knives is supposed to be the same as the sharpening angle or not. If you hold up the 4643 and look at the "V" of the different stages, or slots, I call them, you can see clearly that the angle of slot 3 is wider than both slots 1 and 2. I love the sharpener, but I still don't know what the honing angle is, or what it's supposed to be.
Question: Is this the right tool to sharpen an axe or hatchet wtih a few chips in the blade
Answer: There are three slots: Asian; Euro/Amer; and Polishing & Serrated. The first is for 15-deg Asian knives, the second for "Kitchen & Sports Knives 20-deg edge, and the third for "Serrated Knives and Honing Stage." Following the directions, I swipe our Asian knives 25 times back-and-forth in the first slot, followed by the same in the third slot. I do this about once a week, or as needed, and our knives stay really sharp.

Answer: 4633 have diamond pads, while 4643 have diamond disks. Disks are way better, because they will damage blade much less during sharpening process. Pads will do lateral cuts into blade, that in the long run force edge to develop micro chips and cracks, while disks will do angled (more like diagonal) cuts.

Question: What is the angle range on this sharpener
Answer: I've always use just water. Then use a Scotch-Brite pad to scrub the Nella particulates off the stone. I had one that lasted for 10 years plus. I only bought this one to replace it because I dropped it off the counter and a cracked. I would not use pony oil or any type of cutting oil with the stone just tap water works the best. The stone I originally had lasted those 10 years I probably filleted tens of thousands of fish from albacore bluefin tuna to giant Pacific halibut working on a charterboat and owning one
Question: Have you received extra-extra fine diamond stone with this order? Thanks
Answer: NO The finest side is as coarse as I would use to remove chips on a straight razor. Sharpening starts at 4000 grit, and gets finer from there. You also want a continuous stone as the holes cause problems with as fragile an edge as a straight razor has.
Question: How well does this kit compare to the Lansky diamond kit
Answer: That depends on how sharp you want your blade. If you want a very fine edge, you'll want to use something with a much higher grit. This particular item is good for creating an edge with micro-serrations; which is pretty good for every day kitchen needs. So you have to judge if your knife needs sharpening and the 1200 grit is high enough for your needs. Personally, I used to use a Rada non-serrated blade for bread cutting, and the 1200 grit put a good edge on it for cutting just about every bread I tried it on, as well as most other soft and medium foods. if you really want something to keep your blades sharp after every use, go with a good Arkansas stone or something in the 4k+ grit range, but I use the DuoSharp on a regular basis for my non-japanese knives and it works very nicely every couple of weeks to bring them back to sharp from moderate.
Question: On a knife such as an 8 in chefs knife will this product hold a consistent angle on the edge from heel to pioint
Answer: Yes. It works superbly. The interrupted pattern collects the fine filings and helps keep the diamond surfaces from getting filled in. I still use a bit of water on this stone and it works great. The fine/extra fine is great for maintaining working tools like keeping wood chisels sharper than most razors. The coarse/extra course is better for battered blades. The interrupted pattern only becomes an issue when trying to sharpen very small tools. The pictured duosharp has a small continuous area on an end for handling small sharpening tasks - like fish hooks or awl points. The holder has a handle on the underside so that I can sharpen some blades that are easier to work when vised. This is really handy for making long razor sharp edges. 'Stones' swap out by unclipping them from the bottom. The handles are build to hold 8" and 10" duosharp stones.

Question: How many (stones) fit into an altoids tin? i'd like to carry stones in my sheath so i can sharpen if needed. too small for 4-6 inch blade?? ty
Answer: This stone is very coarse and aggressive, for putting the initial bevel on the blade. It will not work for serrated blades, or serrated portions of blades. If the blade is already pretty sharp, it would be better to go with a finer stone to maintain the edge. The best way is to use an ascending series of stones, starting with very coarse to very fine, maybe 1200 grit or so to finish. In my knife sharpening business, I finish up each blade using stropping compound on a leather strop, so my routine is 7 ascending grits in all.

Answer: Hello, This is a sharpener, not a lapping stone for flattening other stones. The surface is not designed to withstand the abuse of flattening. DMT has a DiaFlat with our developed hard coat technology; this is the only stone we recommend using for this application.

Answer: It depends but if they are already sharp then the finest grit is best to keep them in shape. to resharpen you"ll want a coarser grit. the 'fine' stone is probably best for all around.

Answer: I use it dry ! But also take a wet towel to it wipe it down every now and again .

600 diamond mesh. Durable plastic storage box with mounting tabs. 6" x 2" Diamond Sharpeners. This all-purpose whetstone sharpens and hones a variety of household tools and equipment, maintaining the accessories for the hobbies of just about everyone in the house. Its most common use is for sharpening kitchen cutlery and scissors; however, this whetstone also works on chisels, planes, masonry drills, and other shop tools; garden tools; ice skates; climbing equipment; ski edges; fishhooks; ceramic; stone; and glass. The whetstone is durably and uniquely constructed of perforated steel molded into a plastic base. The surface features minute pieces of diamond, the hardest known material for sharpening, embedded into a nickel plate, to achieve an extremely sharp edge. The bonded diamonds are arranged around an innovative pattern of plastic discs and the combination of these two materials greatly reduces sharpening time and resists wearing over time.

This particular whetstone is encrusted with a fine diamond grit of 600 mesh to put a razor-sharp edge on any type of blade. The surface should be moistened before sharpening and the blade should be passed over the whetstone with light pressure at a 20-degree angle to get the proper edge without dulling it. After sharpening, the whetstone may simply be wiped off and its nonporous properties prevent water from seeping below the surface.

Answer: Just had a look at mine--nope, no abrasive on the edge--the cards are really thin, so I don't there really could be, anyway.

Answer: Never have tried to cut them in half. Haven't experienced your problem with wear either. love these little stones. They do wear out though.

Answer: I don't think there is any danger of snapping the Dia-Sharp card by accident (or on purpose, for that matter). The substrate appears to be steel, about 1.5x the thickness of a credit card, with the finishing surface diamond-impregnated.
Question: does it work better wet or dry
Answer: Please do not buy from this seller, I had to get a refund from amazon because it only came with the extra fine sharpener. I have however used it several times on my mora which is effective but by sight and through refracting light seems to be no presence whatsoever of diamonds. As much as this will probably be criticized, I recommend just grabbing a good ol' reliable puck sharpener.

Question: With the interrupted pattern, can you use your hand to sharpen chisels and plane irons like you can on water and oil stones
Answer: I sharpen a variety of tools using these. However, I believe you could use them to sharpen a circular saw blade you would still need the device to make sure your offset angles on the blade remain consistent. If you could hold the tool steady it would sharpen them. I use them on pruners, axes, knives, hoes, shovels, and others. I only buy the DMT brand as they contain much more diamond abrasive then the cheaper imported versions.

About Sharpening with DMT

There is a ‘break-in’ period for your diamond stone. Initially, it will feel especially rough but will smooth over time without impacting performance. Let the diamonds do the work; just light strokes with the edge to sharpen, same number of strokes each side. Approximately 5 or 6 strokes per side (depending upon condition of edge) compared to 30 strokes per side on a conventional stone, saving time and extending the life of the knife or tool. Start with a coarser grit for damaged or dull edges and work to finer grits. The work the edge is to do will help you determine the grit needed: Rough work, end with coarse grit (cutting cardboard); finer work, work through finer grits (food preparation).

Answer: No, these stones are like pocket watches. Larger DMT stones do fit the aligner.

Answer: Hi, Everything you need is in the kit; keep in mind, the serrated knife sharpener is not included in this kit.
Question: what are the dimentions of this diamond sharpener
Answer: Yes. Buy a strop and green compound. Strop if you want razor sharp. DMT's "extra extra fine" is equivalent to an 8000 grit stone. I find my 8000 stone gives a very nice edge that passes the paper test with some ragged sections but does not shave very well. A few minutes on the leather strop with green compound and the same knife will remove most arm hair with a single stroke and push cuts with dignity. It makes a phenomenal difference. Always end woth the strop at a slighlty less angle and if you put a loose strop on a rubber or hard foam surface, so the strop can flex around the blade, you can strope at 5-10 degress for a beautiful polish. Its worth the investment for a piece of leather and the compound. The money you save on this kit affords you a savings even with the strop and you wont need to replace anything, except maybe the guide, for the rest of your life

Answer: What you need to get started is all there; the only thing you may want later are coarser and/or finer stones but that is, forgive the expression, spiitting hairs.

Answer: I have a coarse/fine stone and the red side is fine, so I would venture a guess that the red side is fine

Answer: If you maintain the edge on your knife regularly the Fine/Extra Fine will be the best selection to keep it sharp. It's the one I use. If you are establishing the edge on a new knife the Fine/Coarse would be the one to use.
Question: I use a rolling honing guide for sharpening chisels and planer blades for woodworking. Will the perforated surface of these work with a rolling guide
Answer: Haven't tried it myself since I don't own any ceramic knives but it would appear that a diamond hone, diamond belt grinder, or a diamond wheel electric sharpener would all do the trick. Since the diamond hone is manual, it would take the longest. You might want to Google "kyocera ceramic sharpener" and/or "kyocera CDDS-50" (Amazon has a decent price on this item) or enter that same search term in YouTube to view sharpening demos. Based on what I read and saw, I might even get a ceramic knife in the near future.

Answer: I've always use just water. Then use a Scotch-Brite pad to scrub the Nella particulates off the stone. I had one that lasted for 10 years plus. I only bought this one to replace it because I dropped it off the counter and a cracked. I would not use pony oil or any type of cutting oil with the stone just tap water works the best. The stone I originally had lasted those 10 years I probably filleted tens of thousands of fish from albacore bluefin tuna to giant Pacific halibut working on a charterboat and owning one
Question: Does this system work on straight razors
Answer: NO The finest side is as coarse as I would use to remove chips on a straight razor. Sharpening starts at 4000 grit, and gets finer from there. You also want a continuous stone as the holes cause problems with as fragile an edge as a straight razor has.
Question: Would this be a good sharpening system to keep blades that are already sharp at their peak sharpness? Good for in between full sharpening
Answer: That depends on how sharp you want your blade. If you want a very fine edge, you'll want to use something with a much higher grit. This particular item is good for creating an edge with micro-serrations; which is pretty good for every day kitchen needs. So you have to judge if your knife needs sharpening and the 1200 grit is high enough for your needs. Personally, I used to use a Rada non-serrated blade for bread cutting, and the 1200 grit put a good edge on it for cutting just about every bread I tried it on, as well as most other soft and medium foods. if you really want something to keep your blades sharp after every use, go with a good Arkansas stone or something in the 4k+ grit range, but I use the DuoSharp on a regular basis for my non-japanese knives and it works very nicely every couple of weeks to bring them back to sharp from moderate.

Answer: Yes. It works superbly. The interrupted pattern collects the fine filings and helps keep the diamond surfaces from getting filled in. I still use a bit of water on this stone and it works great. The fine/extra fine is great for maintaining working tools like keeping wood chisels sharper than most razors. The coarse/extra course is better for battered blades. The interrupted pattern only becomes an issue when trying to sharpen very small tools. The pictured duosharp has a small continuous area on an end for handling small sharpening tasks - like fish hooks or awl points. The holder has a handle on the underside so that I can sharpen some blades that are easier to work when vised. This is really handy for making long razor sharp edges. 'Stones' swap out by unclipping them from the bottom. The handles are build to hold 8" and 10" duosharp stones.
