Care Tips for Case Knives

Tru-Sharp Stainless Steel (SS) is a special high-carbon steel that helps the blades hold an edge. It also offers extraordinary blade strength and corrosion resistance.

Chrome Vanadium (CV) blades are known for their edge-holding ability and easy re-sharpening. However, they are less resistant to rusting, pitting and discoloration than stainless steel. We recommend keeping a thin film of oil on the blade to maintain the finish.

Sharpening

Blades are honed at an inclusive angle of 35° - 45° from the factory. Maintaining a constant angle, hold the blade 17° - 22° from the surface of a sharpening stone and stroke the blade as if shaving a thin layer from the stone. Repeat the stroking motion along the entire edge of the blade starting at the blade heel and working to the tip. Turn the blade over and repeat the process.

Cleaning

To clean the blades and handles of your Case knife, apply a small drop of oil in the joints of your knife and a small amount of oil on a clean, soft rag or cloth. Wipe down the blades and handles with the soft cloth. The inside of knife can be cleaned with cotton-tipped swabs and wooden tooth picks. To remove any adhesive tape on your knife, apply nail polish remover or lighter fluid to a soft cloth to easily remove the residue. Rusting may occur to older knives. Rust spots on older knives should be oiled well and the knife should be allowed to sit for a few days. Carefully, scrape away the rust spot with the tip of a sharp, stiff knife.

Using a small drop of oil, wipe down the joints, blades, and handles. The inside of knife can be cleaned with cotton-tipped swabs and wooden tooth picks. To remove any adhesive tape on your knife, apply nail polish remover or lighter fluid to a soft cloth to easily remove the residue. Rusting may occur to older knives. Rust spots on older knives should be oiled well and the knife should be allowed to sit for a few days. Carefully, scrape away the rust spot with the tip of a sharp, stiff knife.

Question:	How much power does this knife have (so I can compare it with other electric knives
Answer:	The knife has hollows on BOTH sides. Two of the four product pictures on Amazon.com are misleading since they appear to show a side of the knife in questuon without the hollows. As such, these images should probably be removed from the listing since they are clearly not depictions of this particular knife.
Question:	How easy is this knife to hold the button while slicing? I have a hamilton beach now and as it warms up the on button gets hard to push.It's brand new
Answer:	Yes. Typically I've seen sushi chefs using a Santoku for this, but I have cut sashimi (tuna blocks) with this meat slicer and it works fine. Thin and very sharp blade, with scalloped hollow edge helps prevent fish & meat from sticking. If you can find one for under a $100, I think it's a good deal. Shun also makes a number of Santoku hollow edge knives, from under a $100 to over $200, more traditional for preparing sushi.

Answer:	The knife dimensions are 1 5/16 inches wide at its widest point near the handle. The blade is 9 1/2 inches long where is starts to flare out at the handle which is where it would sit in a knife block. From that flare point the handle is 5 inches long. From its point to the very back of the handle is 14 5/8 inches. This is a beautiful knife and extremely sharp so always be very careful. A simple careless slip can leave you with a nasty cut.
