12 best meat smokers
Meat smokers are specialized outdoor cooking appliances designed to cook and flavor meat by exposing it to low and slow smoke and heat. They are popular among barbecue enthusiasts and outdoor cooking aficionados for their ability to create tender, flavorful, and smoky meats. Here's what you should know about meat smokers:
Types of Meat Smokers:
Offset Smokers: These smokers consist of two separate chambers, one for the fire and another for the meat. Smoke and heat flow from the firebox into the cooking chamber, providing indirect heat for slow smoking.
Vertical Water Smokers: These smokers have a vertical design with multiple tiers or racks for cooking. They feature a water pan to help regulate temperature and maintain moisture in the cooking chamber.
Electric Smokers: Electric smokers use electricity to generate heat and smoke. They are user-friendly and convenient, making them suitable for beginners.
Pellet Smokers: Pellet smokers use compressed wood pellets as a fuel source. They offer precise temperature control and produce a consistent smoke flavor.
Charcoal Smokers: Charcoal smokers use charcoal briquettes or lump charcoal as the heat source. They require more skill to control temperature but provide authentic smoky flavors.
Propane Smokers: Propane smokers use propane gas as a fuel source. They offer a clean and convenient way to smoke meat but may lack the depth of flavor of other types.
Key Features:
Temperature Control: Many smokers come with built-in thermometers and vents to regulate temperature, ensuring consistent cooking results.
Smoke Box: Smokers have a smoke box or tray where wood chips, chunks, or pellets are placed to generate smoke for flavoring the meat.
Cooking Space: The cooking capacity varies among smokers. Choose a smoker size that suits your needs, whether you're cooking for a small family or a large gathering.
Insulation: Some high-end smokers offer excellent insulation to maintain stable temperatures, even in harsh weather conditions.
Common Woods for Smoking:
- Different types of wood impart distinct flavors to the meat. Popular options include hickory, mesquite, applewood, cherry, and oak. The choice of wood can significantly influence the final flavor of the smoked meat.
Smoking Techniques:
- Smoking typically involves cooking meat at low temperatures (often between 225°F to 275°F or 107°C to 135°C) for an extended period. This slow cooking process helps tenderize the meat and infuse it with smoky flavor.
Meats for Smoking:
- Common meats for smoking include pork ribs, brisket, pulled pork, chicken, turkey, and various sausages. Each type of meat may require different cooking times and techniques.
Maintenance and Cleaning:
- Regular cleaning and maintenance of your smoker are essential for prolonging its lifespan and ensuring consistent performance. This includes cleaning grates, emptying ash pans, and inspecting for wear and tear.
Meat smokers are a versatile outdoor cooking tool that allows you to experiment with flavors and create delicious smoked dishes. Whether you're a novice or an experienced barbecue enthusiast, choosing the right smoker and mastering the art of smoking can lead to mouthwatering results that are sure to impress family and friends.

User questions & answers
Question: | can you grill with this smoker |
Answer: | Although there are some offset smokers that are designed to allow grilling on the offset box directly over the coals, this one is not that way, smoker only. |
Question: | need exact dimensions. width - just smoker and wood box - no legs / height of vertical smoker and wood box |
Answer: | Smoker is 36"X16". Wood box is 14"X12.5". Both are 15" deep. This smoker did an amazing job on a batch of fish I recently did. No lack of smoke from this one. |
Question: | What gage is the steel |
Answer: | Is the steel strong enough for it not to start burning out or Rust |
Question: | if i used wood but it runs on charcoal wouldnt the charcoal over power the taste of the wood |
Answer: | My opinion is just turned around from these others, in that once meat reaches a certain temp, usually within about two hours, it will not add any more smoke flavor. Depending on what type of wood your using, hickory being one, you will give your meat a bitter taste. So after using your favorite wood initially then I will switch over to only charcoal if I'm using my Weber or a white oak wood that is very mild to finish it up. Nothing like smoking meat for 8-10 hours and have it taste bitter and over powering. Perfect smoked meat every time for me is charcoal on the Weber with the soak wood chunks for the first two hours and nothing but just plain charcoal the rest. I buy the Kingsford charcoal on memorial and labor day when there two for one. Generally a 5lb bag of chunks will last me nearly a year. So these guys spending $100 to smoke what only cost me about $10 per session. Get the pork butt to 190 degrees, wrap it in heavy duty foil and let it go another 30-45 minutes wrapped, pulled pork every time. Follow these instructions and I'd put your meat against anybody's taste wise... and enjoy the compliments! |

User questions & answers
Question: | Are there separate trays for chips, water and drip pan? Three trays total |
Answer: | There is a "chip pan" and "water/drip pan" and a separate drip pan on the bottom of the unit, below the burner. The water pan catches most of the drippings and that's why I call it a water/drip pan. |
Question: | How long does the wood last in the tray |
Answer: | Depending on your temperature the wood chips will last any where from 1 hour to a 1 1/2 hours. |
Question: | does the smoker tray pull out easily after the unit is heated up |
Answer: | It pulls out VERY easy. |
Question: | Can this be used as a grill and or for baking |
Answer: | Not mine and I feel that the 'Pit boss' has misled us with statements and pics stating that it CAN be used as an oven for baking pizzas, breads etc in pics where my new 77435 won't get above 310f [empty]. I'm currently trying to adjust the air intake valve to get a decent flame, but I doubt even with a perfect blue flame and slightly yellow flame tips would achieve a decent bake temp. They do state that the 77435 burner is rated at 13,000 BTU, which is kinda low to begin with. But it does make a great long slow low temp smoker........... |

User questions & answers
Question: | The lowest temp I got with knob set at low, with no water and empty in the smoking chamber is 235 degrees. Without water, what temps did you get |
Answer: | Used mine once. With water in one tray, on low, in full sun, ran at 200°. |
Question: | The extra tray for water where do you put it on the lower rack or where the other tray is first time doing this |
Answer: | I put it on the lowest rack accessible from the upper door. |
Question: | Can the racks be removed and meats hung? Does it have a hanging ring in top |
Answer: | The racks can be moved and removed. I've not seen any hanging hooks or rings on which hooks might be hanged. |
Question: | How long will a propane tank last with this one |
Answer: | I came up with a crude way to estimate how much fuel I have used thus far. Propane weighs about 4.24 pounds per gallon. The tank weight is about 17 pounds. I have run my new smoker for about 12 hours so far and have used about 4 pounds, and have about 9 pounds remaining, so that rounds out to be about .33 pounds per hour, and my smoker was set at the lowest flame setting. So I have about 27 hours remaining in the tank.A word of caution about tank exchanges! I had to exchange tanks because mine was too old, so I exchanged 2 tanks. Upon weighing each, I found that there was only 13 pounds of fuel in each tank. So, keep that in mind if you use the exchange program. When you refill a tank, you should end up with about 20 pounds of fuel +/-, so it is pretty obvious that while the exchange program is often more convenient than going to a refill station, you will get more fuel, and longer use out of a tank that you have had refilled at a fill station.I used a bathroom scale, so my results are not perfect, but should give you an idea of what to expect. |

User questions & answers
Question: | Can you change the chips out without opening the door and losing all your heat and smoke |
Answer: | There is a small door for the chip pan to go in and out of. Since the chip-pan-door is at the bottom of the unit, you lose very little heat/smoke even if you were to leave it open while loading chips. The chip-pan-door will not stay open unless you hold it open. |
Question: | How often do I need to change the wood chips? It seems like mine quit smoking after about 20 minutes |
Answer: | The chops will smoke heavily for about 30 minutes but leave them in until all you gave is ash product. Fill completely again. |
Question: | Does the top come off at all? I use this for smoking cheese, and need to adjust the lid so it dont get to hot in the smoker |
Answer: | It's the wrong kind of smoker for smoking cheese. You are looking for a cold smoker. This is a hot smoker that is made to cook and smoke meat at the same time and will have a temp. of 160 to 180 degrees F. Cold smokers have a temperature of 70 to 80 degrees F. They are used for things like cheese, nuts, bacon, ham. Meats for a cold smoker have to be cured first. Often the fire box will be completely separate from the cold smoker to give the smoke time to cool down and cold smoking is done during cooler times of the year to keep the temperature down. |
Question: | What are operating cost? say for 24 hrs |
Answer: | Well it's a 250 watt element. So for 24 hours that's 6 kilowatt hours(kWh). So look on your electric bill for your kWh pricing. Multiply your kWh price by 6 and you've got the answer. For instance if your electric costs $0.12/kWh then it would be $0.72 to run the unit for 24 hours. Hope this helps! |

Question: | How would you compare the performance between 14.5 an 18.5? same amount of charcoal? same amount of time to cook? any diff in temp control |
Answer: | Have used the 14.5 a few times now (tri-tip, meatloaf, two hot-n-fast cooks with pork butts)...It's a pretty cool little cooker. Have several years experience cooking with a tamale steamer converted smokey joe. Thus far, I'd have to say it cooks similarly to those (with the added bonus of a water pan and door). It holds less charcoal than the 18.5, for sure. For the hot-n-fast pork butt cooks I had to lift off top/center sections and refuel...not too difficult, but something I don't have to do with the 18.5. Haven't really tried a true low-n-slow cook yet...can't say how long cook time might be under those conditions (have had good 6 hour plus burn times on the converted smokey joes). When I cook hot-n-fast, to be honest, I just let 'er rip...this little guy gets plenty hot, plenty fast. Obviously, there's less space in the 14.5, you can get a butt on each grate and that's about it. I don't use water when cooking hot-n-fast either, but the water pan is much smaller than the 18.5. I think I'm going to enjoy cooking on this, but If I had to choose one...I might choose the 18.5 (increased charcoal/cooking capacity). Lucky me, I've got both and a couple of 22.5's!! Hope this helps. |
Question: | Am struggling with which size Weber Smokey Mountain Cooker to get - 18.5 inch or 22.5 inch. Can you tell me the advantages to both. Thank you |
Answer: | I have owned the 22.5" for a year and I can tell you that it is worth the purchase. It can hold any piece of meat that you can think of putting on it and it stays fired up for all smoke jobs. I have smoked whole turkeys, briskets, pork butts, chicken, and burgers/brats/dogs. I would say I've put roughly 25 smokes on it and I have never had any issues with it. I also smoke for 4 people generally. The 18.5" is going to be exactly the same thing except in a smaller form. It may not have the room you are looking for if you get a large cut. I have seen a lot of comments saying that the 22.5" uses more fuel and while that is correct it doesn't have to be filled to the brim for a smoke. I normally use a half ring and if I need a few more coals I just throw them on. Never had an issue with it. I would rather have the size and not need it than regret not getting the extra room. If this is well taken care of it could last for several decades so what is the big deal with spending an extra $100. Just my 2 cents. |
