Grits can be prepared simply—just ground corn, salt, and butter—but they become transcendent when given an elevated treatment. In this recipe, Justin Devillier, the chef/owner of La Petite Grocery in New Orleans, puts a French spin on the Southern classic. He uses the traditional French technique of incorporating whipped egg whites to add volume—this same method is used to puff up souffles. Devillier then folds in aged cheddar to spread extra flavor evenly throughout the grits.
Recipe:
Preheat the oven to 350°F.
Combine 2 cups water, the milk, butter, 1 teaspoon salt, and the pepper in a 4-quart cast-iron cocotte. Place over medium-high heat and heat until it is steaming but not quite boiling. Add the grits in a slow, steady stream while whisking to prevent lumps from forming. Once all of the grits are in, bring to a boil, then immediately reduce the heat to low. Cook, stirring occasionally for about 20 minutes, until the grits are thickened enough to stick to the spoon but not the
bottom of the pot. Add the cheese and fold it in to incorporate. Remove from the the heat.
Place the egg whites into the bowl of a stand mixer fitted with the whisk attachment. Add a pinch of salt and whisk on high speed until stiff peaks form. Fold the egg yolks into the warm grits. Add one-quarter of the egg whites and use a spatula to very gently fold them into the grits.
Add the remaining whites and fold to combine. If you are using mini cocottes, pour the mixture into the 6 to 8 cocottes, leaving an inch at the top for the souffle to rise. Bake for 45 minutes for the large cocotte and 30 minutes for the minis, or until puffed up, golden brown on top, and the aroma of toasted cheddar fills the kitchen.
Serve warm.

2. Although dishwasher safe, hand washing with warm soapy water and a nylon Scrub Brush is recommended to preserve the cookware’s original appearance. Citrus juices and citrus-based cleaners (including some dishwasher detergents) should not be used, as they can dull the exterior gloss.
3. If necessary, use nylon pads or scrapers to remove food residue; metal pads or utensils will scratch or chip porcelain.
4. Slight stains can be removed by rubbing with dampened cloth and Lodge Enamel Cleaner or other ceramic cleaner according to directions on bottle.

Answer: | Lip is about one half inch and rounded. I would never use this pan with more than a coating of oil. Using more could cause a spill and fire. |

Answer: | It is excellent for this purpose, but you should also consider the Lodge pizza griddle. I preheat to 500, insert my pizza on a pizza screen and then slide off onto the cast iron after 4-5 minutes. I lightly oil the screen but not the pan. The 14" griddle is a terrific pan for many purposes, and it retains higher heat even if you're only using a small part of the surface. Some people use it as a "pizza stone." I use both these pans very frequently. |

Cast iron is of course way better than the clad cookware that can get loud from vibrations as the different layers absorb the magnetic energy at different rates. This also doubles as a great defrosting plate from stuff from the freezer. Your great-great grandchildren will be glad you bought this as they're using it. |

Answer: | These are made of plastic, much like a spatula you would use on Teflon pans. I think they would be fine to use on your nonstick pans. |

Answer: | I have used the scraper when brown meat in the iron pot and then scrap to get the scraps up. But, I am also now using it when I cook my oatmeal in a stove pot.Eveything just comes away from the sides of the pot. I put the rounded edge toward the curve of the pan or pot. Hope this help. |

Answer: | Depends on your pan. I use these on my enamel coated cast iron, the metal will ruin the finish. If you have roughed up cast iron, I would use metal/chain mail then season well. |
Question: | Are these heat resistant? Can I use them while the cast iron is still hot |
Answer: | They are not heat resistant and cannot be used while the pan is hot. Warm, sure, but not while hot. I melted one of mine slightly due to the pan being too hot while scraping. |

Seasoned cast iron propelled Lodge from the position of a regional manufacturer to the national stage, with Good Housekeeping presenting a “Good Buy” Award for the product enhancement. While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.
In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.
As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.
The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.
When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.
The Clean Water and Air Acts of 1970 led American companies to install new equipment to meet the pollution control laws. Lodge accepted the standards by replacing the old electric furnaces and adding a second Disamatic molding machine.
Not only did the updates meet the requirements of the Clean Air and Water legislation, by 1976 our automated processes produced as many molds in an hour as one man’s daily productivity 30 years earlier.
With the switch from antiquated electric furnaces to environmentally sound induction furnaces, 1991 proved to be a pivotal juncture in the standards of Lodge Manufacturing Company. The use of magnetic energy to produce heat changed our status from a Large Quantity Generator of Hazardous Waste to a Small Quantity Generator, and we received the 1994 Tennessee Governor’s Award for Excellence in Hazardous Waste Reduction.
Today, Lodge Manufacturing Company maintains a zero hazardous waste stream foundry, earning accolades from the environmental and manufacturing communities.
Eleven years after in the introduction of seasoned cast iron cookware, Lodge broke ground for our foundry expansion. With completion of the first phase in the fall of 2014, the expansion includes a new melt system, an additional pouring/molding line and most importantly—new American jobs!

The Lodge seasoning procedure is a multiple-step process in which the seasoning oil is applied via an electrostatic spray system that coats the cookware, then it's baked in commercial ovens at very high temperatures. This allows the oil to penetrate deeply into the pores of the iron. This seasoning process achieves a seasoned finish that would take many months of home use to achieve.

Answer: | 1. season your salmon with some oil seasoning paste (oil + seasoning+ salt+ other spices of your choice). Let rest for 10-15 mins for the oil seasoning paste to be absorbed into the fish. If you don't like highly-seasoned foods, then make sure you buy good quality salmon, and you can just season it with some salt and a thin layer of oil, then adding some fresh lemon juice before serving. If you want to skip the oil too, then you need the part of the salmon that has more fat)2. Heat the pan until very very very hot, you don't need to put oil into the pan.3. Use medium high heat. Put the fish with the side you want to present on the plate DOWN. Seal for 2-4 mins depending on the thickness of your salmon.4. Flip the fish when you see the meat is almost half way cooked (you will notice the cooked part has a slightly different color)5. Turn OFF the heat or turn the heat down to low, because the heat from the pan will cook the meat for you and this process will prevent from over-cooking your fish.6. Cook for about 2 to 3 mins or until you see the color of the fish meat is slightly pinkish and when you press the fish with your finger the meat will not bounce back.7. Serve with some freshly cut lemon wedges, the squeeze the lemon juice on the fish before eating. |

Answer: | Cast iron cookware is my favorite! I usually just rinse with hot water and use a mild scrubber on mine. After some time, however, my cast iron gets buildup on the sides - I put the pans in the self-cleaning oven and they come out like new. They do have to be re-seasoned but that doesn't take much effort. I'm sure it would work fine on this ridged pan that is sure to be more difficult to clean. |

Answer: | Much better. I have this Lodge and the LC enamel version. Trust me on this - never buy this style pan with enamel coating. Grill type pans are more difficult to clean because of the ridges, nooks & crannies. Because cast iron seasons better and becomes more non-stick than enamel, it is MUCH easier to clean with use. My LC is in the garage awaiting disposal. I love LC, but their grill pans should be avoided. |
