Tane di Semola is made using a simple straight dough. Be sure to use the finely ground semolina flour that is used for making pasta rather than the coarser grind that is similar to farina, a protein-rich flour also ground from durum wheat. This bread is a good one to choose if you will be using the Delay Timer. It is fantastic warm with garlic butter melting in, and also makes great bruschetta.
Directions
Place all the ingredients in the pan according to the order in the manufacturer’s instructions. Set crust on dark and program for the French Bread or Basic cycle; press Start. (This recipe may be made using the Delay Timer.)
When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.

Answer: | Honestly, there were a few times where one or both didn't drop down and was pretty frustrating to me since this is a huge selling point of this machine - and for some justifies the big price tag. But then the times they did lay down they left a huge mangled mess on the bottom parts of the loaf. It's so much bigger than you think too because its programmed to spin twice in the early part of the baking stage - so it leaves two impression areas for each paddle!! The bottom of the loaf becomes really crispy and falls apart as a result.My solution, and I realize this doesn't work if you leave the loaf to bake while away from the house or sleeping etc, was to take the dough out -AND- the paddles after it 'punches down' the dough for the last time (right before the 2nd rise and bake cycle starts) and shape the dough myself and put it back in the pan -without- the paddles. Now I just have two tiny holes in my loaf!!I know it could be more work and it defeats the purpose of having a machine and not having to babysit your bread - but I didn't know this would happen when I bought it. And since I'm stuck with the machine - this is my solution.The way I figured out when the 2nd rise was, was by seriously sitting by the machine one time while doing bills or whatever and stopping and writing down each time it spun and stopped. I really only do 100% whole wheat and when it's got 1 hour and 30 min left on the display (for whole wheat 2lb light crust) that's when I take the paddles out. So I'm not sure what white or gluten or other loaves would be. It also had helped (shaping the dough myself) with the issues I was having with the bottom of my loaves being really dense and hard and the tops overloaded with huge holes and collapsing sometimes. Another thing I wasn't expecting from a bread machine!!Hope this helps! |

I don't normally carry my tape measure to the grocery store; so I just trusted those numbers were correct. It wasn't until later when I realized the real dimensions from top inside edge to top inside edge:the 9"x5" pans are really 9.5"x5.25"the 8"x4" pans are really 8.5"x4.5"the 5.75"x3" pans are really 5.75"x3.125"Why the difference? Answer: | Mine was that way the last couple years of its life. The shaft is coming out the bottom of the pan, right? What's happened is there used to be a little circlip around the shaft right under the seal (on the inside of the pan) that used to hold it in. The circlip has rusted out and broken.If there's still enough friction around the edges of the seal to hold the shaft in against gravity, you can keep using it, because once the pan is in the breadmaker the shaft will rest on the drive plate and won't fall out. In a way, it's a good thing because you can take the shaft out and clean it and the bearing when it gets sticky. On the other hand, if the seal isn't gripping the shaft at all and the shaft just falls out by itself, it means the seal is also shot and you probably ought to replace the pan. And if you're going to replace the pan you should probably also replace the paddle because the Teflon coating wears off after a while. I was coating the paddle on mine with oil (cooking oil!) for every batch of bread, which was getting tedious.To be honest, I just retired my unit a couple weeks ago and replaced it with a Panasonic, because after 10+ years of a loaf of bread a week, it was pretty worn out.- Andy |

Question: | On pg. 23 of the manual, it says "7. Press SELECT to choose desired course. The operation light will illuminate.....". There is a display that provides info in black text, but it is not really "illuminated" and is difficult for my elderly parents to read. Does this sound like a defective unit |
Answer: | I don't think the machine is defective. I'm assuming that that illumination light that the manual refers to is simply the red light that comes on above the area where it says..."keep warm". That's the only light that I have that illuminates on the outside of the machine. There is also a light that comes on inside the machine when I lift the lid. It would be nice though and easier to see if the actual digital screen was backlit. |

Answer: | You can turn off any cycle and set the length for any cycle. Preheat: off-30 min. Knead: off-30 min. 1st Rise: off-24 hours; 2nd Rise: off-24 hours; 3rd Rise: off-2 hours; Bake off-70 min. Keep warm: off-60 min. |
Question: | If you choose the gluten free setting, will you also have control over the crust settings |
Answer: | I just checked my machine. Apparently the gluten free setting is set at medium and you cannot change it. Also you cannot change the size of the loaf. I use the rapid white setting for my spelt bread. |
