Answer: | A little information guide for the user was included. Among other things, it says not to use butter or olive oil because they smoke at a lower temperature. They recommend canola, Safflower, peanut and palm oils. Now I will quote. "Alllow the oil/butter to heat up in the pan before adding food to the cookware. DO NOT rush the preheating process by using high heat. Because of the excellent heat conductivity of your OXO cookware, food and oil can carbonize very rapidly. Always cook on low to medium heat and only use high heat for boiling liquids. Use medium-high heat for searing, sauteing, stir-frying and reducing liquids. Use low heat to warm foods, simmer or for preparing delicate sauces. DO NOT use any typeof oil sprays, including aerosols, mist and pump sprays. These sprays can cause residue build-up that is difficult to remove from all types of cookware. Always distribute the oil evenly onto the surface of the cookware. Use the 'butter test' to determine whether your OXO cookware is hot enough--simply wipe a dab of butter on the bottom of the cookware. If it bubbles briskly without burning, your OXO cookware is perfectly preheated."I myself have only used it to make pancakes. I also disobeyed instructions by using a metal spatula. Answer: | Yes, it cooks better with the lid closed. Especially if it's windy. Just make sure to run it on high while empty for 20 min the first time you use it. Let it cool and wipe it down. Other wise you could get some paint fumes/taste in you first batch of food. |
