14 best global boning knives
Global boning knives are specialized kitchen knives designed for the precise task of boning meat, poultry, and fish. They are part of the Global knife brand's extensive line of high-quality kitchen cutlery. Here's what you need to know about Global boning knives:
Design: Global boning knives are known for their distinctive design. They have a sleek and modern appearance characterized by a seamless construction where the blade and handle are made from a single piece of high-quality stainless steel. The handle is typically filled with sand for balance and is dimpled for a secure grip.
Blade: The blade of a Global boning knife is narrow and flexible, allowing for easy maneuverability around bones and joints. It is made from high-carbon stainless steel, which is known for its sharpness and edge retention.
Sharpness: Global knives, including boning knives, are renowned for their sharpness. They are sharpened to a steep angle on both sides, creating a razor-sharp edge that makes precision tasks like boning more manageable.
Flexibility: The blade's flexibility is crucial for navigating the contours of meat, separating flesh from bone, and removing skin or connective tissue. It allows for clean and precise cuts.
Size: Boning knives from Global come in various sizes, with blade lengths typically ranging from 5 to 7 inches. The choice of size depends on the type of meat or fish you intend to bone and your personal preference.
Versatility: While primarily designed for boning, these knives can also be used for other delicate tasks in the kitchen, such as filleting fish or trimming fat from meat.
Maintenance: Like all quality knives, Global boning knives require proper care. Handwashing and immediate drying are recommended to maintain their sharpness and prevent staining. Sharpening with a honing rod or whetstone may be necessary to maintain the edge.
Safety: Due to their sharpness, these knives should be used with caution. It's essential to pay attention to hand placement and work on a stable surface when using a boning knife.
Storage: To protect the blade and ensure safety, consider storing your Global boning knife in a knife block, magnetic strip, or blade guard.
In summary, Global boning knives are specialized kitchen tools known for their sharpness, flexibility, and precision in boning meat, poultry, and fish. Their unique design and high-quality materials make them a popular choice among professional chefs and home cooks who demand top-notch performance from their kitchen cutlery.

Product description
The chef's knife is the multipurpose workhorse of the kitchen. Perfect for mincing, cutting, chopping, slicing and prep work. The "workhorse" of the kitchen is perfect for cutting, chopping, slicing and prep work.
High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-inch chef's knife is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety.
Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack

Razor Sharp Edge
The most important feature of any knife is its edge, and the GLOBAL edge is truly its signature. The majority of the GLOBAL knives are sharpened or ground on both sides of the blade, just like Western style knives. However, their edges are ground steeply to a point as illustrated in Fig. 1, and to an acute angle. This is in contrast to Western or European knives that use a beveled edge, Fig. 2. The straight edge results in a dramatically sharper knife which stays sharper longer. The edge on a GLOBAL knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.
Cromova 18 Stainless Steel
CROMOVA 18 is a steel, with a special mixture of molybdenum, vanadium and chromium. The exact combination is our trade secret, but the steel is made to be hard enough so that the knives retain their sharpness, yet soft enough to sharpen with a whetstone. The high chromium content gives the knives excellent resistance to rust and staining.

From its modest inception, GLOBAL has developed into one of the most successful brands of professional kitchen knives in the world. GLOBAL has attracted much acclaim over the years and received numerous awards.

User questions & answers

Answer: | No. It bends, as you would expect a thin steel knife would, but it is not "flexible" as a feature in the way that some fillet knives have. Still a good knife, I often use. Have I had it twelve years? |

User questions & answers
Question: | Does anyone have this and a dalstrong shogun series x gyuto? how do they compare? does the hammered finish make a difference |
Answer: | I have no idea, I didn't know that knives could be left or right. I'm not a knife guy. Bevel or edge looks same on both sides. I'm right handed and it works for me. Sharp, good weight, feels good in my hand. Imagine it could work the same for a lefty. Ant Bourdain recommends these knives, which is why I got them. Works for me. May the force be with you. |
Question: | Where is this product made |
Answer: | My eyeball is not calibrated enough to see this, but per Global, all their knives use a 10-15 deg grind angle. |
Question: | Where is the knife made |
Answer: | Not at all! They just have a black coloring in them and look deeper than they are. We love our Global knives. We have 11 different knives and they are wonderful. Make sure you learn how to sharpen them correctly and you will love them! |
Question: | Can you tell me, is the knife Asian style or Western style |
Answer: | This is ONLY set out of the box as a left-handed knife. In order to use it in your right hand you're going to have to reset it. This requires setting the knife down in spinning it to the right two times. Then you will be able to use it right handed. If you want to use it as a left-handed knife again you will have to set it down and spin it to the left twice. 🤔😉 |

Question: | Is this knife full tang through the handle |
Answer: | This is a great question and was pointed out in one of our customer reviews. The blade material is made from Japanese VG10 Super Steel and is honed to 12-15 degrees per side which is typical for Asian knives so from the perspective of blade material and sharpness, definitely Asian style. However, the knife also comes with heft, strength and balance which is traditionally recognised as that of a Western style knife. This is what makes the Zelite Infinity a unique choice - it combines the best from both styles to create a knife that is very sharp, has great edge retention yet carries the heft and feel of a Western style knife.Hope our answer was helpful. |

Care and handling of Millennia cutlery
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

A TRUSTED FAVORITE
Preferred by both home chefs and culinary professionals, the 6" Victorinox Fibrox Pro Boning Knife can bone thinner cuts of meat and fish with accuracy. Crafted with a comfortable handle, superior weight and balance, and a flexible, razor sharp edge that rarely requires re-sharpening, this knife is an essential tool for every kitchen.
KEY FEATURES
- High-quality, lightweight European steel.
- Handle design reduces hand and wrist fatigue.
- Fit for removing meat and fish from the bone.
- "S" shaped and flexible blade that allows for better working angle.
- Non-slip patented Fibrox Pro handle for a secure and comfortable grip no matter the hand size.
- National Sanitary Foundation (NSF) approved and dishwasher safe.
CARE AND USE
Be good to your knives and they’ll be good to you. Following these simple guidelines will ensure that you get the longest life out of your knife!
CLEANING
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.
SHARPENING
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best.
FORMERLY FORSCHNER
In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.
- VERSATILE DE-BONING TOOL. Trim or remove meat from the bone with ease. This knife's pointed tip easily pierces meat while the straight-edge allows for smooth, clean cuts -- even through joints and cartilage.
- IDEAL FOR DELICATE CUTS. Delicate poultry and fish can be difficult to debone with accuracy. The flexible blade allows for a better working angle when cutting fish or thin cuts of meat that are more intricate to bone and easily pierced.
- EASY HANDLING. This knife features an ergonomic Fibrox Pro handle for a non-slip grip -- even when wet. This exceptional knife is weighted and balanced for easy handling and comfort.
- KNIFE DIMENSIONS. Stainless steel blade -- 6" in length. Meets the strict National Sanitation Foundation (NSF) standards for public health protection.
- TRUSTED SWISS QUALITY. Expertly crafted in Switzerland in 1884, Victorinox provides a lifetime guarantee against defects in material and workmanship. Making a lifetime commitment has never been so easy.
