Answer: I have been using this board for pasta and bread making and have found no problem what so ever. I treat it with the recommended oil to maintain the integrity of the board.
Question: Is the lip on this board long enough to be stable on a bullnose edge countertop
Answer: I don't think there would be a problem. The lip is 1.5" h x 26" l. Overall length of the board is 28", overhanging if you will an inch on each side of the lip. With the size and weight of the board I don't see an issue.
Question: Does anybody have a problem with high-hydration bread dough sticking
Answer: You can use a very small amount of fine flour to avoid serious sticking (as do all French bakers for baguette dough.) I also make use of a pastry scraper. If you work with "light hands" and don't squeeze or hang on to the dough, high hydration can be worked with this board. The pastry scraper is an essential tool, however, to lift the edges of the dough when it's been proofed. (I proof mine on parchment paper, which I then slide into the oven with the loaves on it using a large peel.

Question: What type of wood
Answer: I dont know but i love the board. Its like maple. I had to give it a light sanding when new. I vacuumed it carefully and gave it a very quick hot sudy water wash and rinse with plastic dobbie ( non shedding) pad. Never to touch water again hopefully. I dried it with a clean towel and rubbed it sll over with salt ( messy) brushed this off with paper towels ( to catch any loose wood dust) then again with plain flour. After all if this i oiled it with coconut oil. Some use mineral oil, which works best for cutting boards. The coconut oil washes off too easily. But for pastry use and not washing its fine. It came out nice. Really happy with it.
