CLEANING
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.

Answer: | I think you want a fine edge when doing that, so something that has an angle of 14 degrees or less for the cutting edge, on each side, or a blade that's only beveled on one side, and also a blade that doesn't get very much thicker as the blade cuts through. A high quality Chinese chef knife is good, or getting a blade such as the manufacturer suggested is good. I use a European 8" chef knife to cut through sushi rolls, but I have it sharpened at 14 degrees and the blade is thin, but I have to rinse it about every 4 cuts. I also have to hone it more often because of the fine angle. |

Care and handling of Millennia cutlery
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.

Hand Washing
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
Dishwasher
While Swiss Classic knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.
Maintaining your Knife’s Edge
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening.
History and Heritage
In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born.
Today, Victorinox is still owned and operated by the Elsener family, and both the company and family still resides in the small village of Ibach, Switzerland.

Answer: | My order was fulfilled by Amazon, so they should be embarrassed. This bottle has 365 pills, so it obviously should have an expiration date of at least one year out from the date of sale. I purchased my pills in April 2020, and the expiration date is November 2020. Obviously, that means my bottle will expire with only half of the pills used. Not happy. I know this is not the seller's fault because they relied on Amazon to ship their product, and Amazon dropped the ball. To make matters worse, my package actually had a prominent sticker on it that indicated an expiration date of September 2021, but when I pulled the bottle from the packaging, I found that it's clearly marked as expiring in November 2020. I run out of pills from my old bottle in 2 days, so I don't have time to ship this back and get a replacement, so... I guess I'll be ordering from somewhere else in 6 months. I'm just posting this in case the seller might see it, so they know that Amazon is ruining their rep by shipping out product that does not have a reasonable expiration date. Shun Classic
Shun Classics are the original Shuns, the first Japanese-style knives to be made available to a wider audience in North America. Pakkawood Handle
These traditional Japanese-style handles have a slight ridge on the right side, which fits into the curl of the fingers for a comfortable and secure grip. Viewed end-on, the shape resembles the capital letter "D". Pakkawood is waterproof, incredibly durable, and won't harbor bacteria.
Shun is Different

Layered Steel
Shun proprietary VG-MAX cutting core is a high-end "super steel" that is extremely hard, enabling Shun Classic knives to take an incredible edge and hold it longer.
Stainless Damascus Cladding is made of 34 layers of stainless steel on each side of the blade, for a total of 69 layers. Classic's cladding supports the cutting core, adds stain and corrosion resistance, and looks elegant.

Knives made of the finest steel will hold an edge longer, but even the best of knives dull with use- and the initial factory edge only lasts for the first few days or weeks of use.
Than for more than 99% of a knife's useful life, it's edge performance depends on how it is resharpened. Replicating the initial factory edge is not particularly relevant, especially since today's modern sharpeners can apply a better factory edge on every knife.

Question: | what is the frequency of sharpening needed for home based use |
Answer: | If you're cutting through food where you're hitting the cutting board pretty hard, you'll need to hone the blade more often, but if your cutting soft vegetables and use the speed of your motion and not how hard you push down do the work of cutting, then you probably have to hone it once a month with regular use. Cutting through harder vegys means you're going to hit the cutting board harder though, so if you do that all the time, then you'll be honing about once a week or two weeks depending on usage. Sharpening is a different subject, and if you're not constantly banging the blade down on the cutting board, or cutting around bone which will put microscopic imperfections in the cutting edge, then somewhere between 6 months and a year with continual usage. You'll know because honing won't give you a sharp edge anymore. I LOVE this knife and use it a few times a week so I hone it about once a week, but I have a guide on my steel for 14 degrees and I have a hand sharpener that does 14 degrees each side so both honing and sharpening are VERY easy with this blade, and I've only changed the edge angle 1 degree (these come at 15) |

Answer: | It weighs 8.3 oz and the spine goes from 2.75mm near the bolster, to 2.352mm at the center and 2.19mm at the tip. |

Answer: | The widest part of the blade is 1 3/4 in, the center is 1 5/8 inch and the last inch of the blade narrows down from 1 inch. So this is a pretty wide blade, but very light and very sharp. |

Answer: | I've asked this question and the answer I got from a seller, and I believe you can also get the info from Mercer, is 15 degrees. There is a Wusthof sharpener that sharpens to 20 or 14 degrees. They're newer Classic lineup has blades set at 14 degrees. People saying larger angles are probably giving info for older knives, just like your question assumed two typical angles, 22.5 or 15, when in fact many European style knives have for a long time been set at 20 degrees and the finer blades are set at 11, 14 or 15 degrees. 11 degrees is for really tough metal, so different Japanese expensive blades are set that fine. Since I have the Wusthof pull through sharpener, I've set these to 14, and though I may have to hone and sharpen more often, they cut REALLY easy, and I LOVE this knife set that way. 22.5 is typically the angle for a heavy meat cleaver nowadays, or maybe knives that you buy for heavier outdoor cutting. |

Care and handling of Genesis cutlery.
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

CLEANING
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.
SHARPENING
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best.

Answer: | No, about 3/4's of the way. With this handle type, full tang is not important. |
Question: | what angle is the blade for sharpening? 15 degrees or 20 degrees |
Answer: | From what I could roughly measure (caliper and trigonometry), the original edge relief ("back bevel") is around 14 degrees in mine, and the blade is quite thin already at the start of the relief (0.44mm), so it is easy to go without a bevel+back bevel and sharpen at 15. You can however work with a microbevel at 20, quickly retouching between resharpenings. |
Question: | Does this knife have enough knuckle clearance so you can dice on a cutting board as you would with a normal 8" chef knife |
Answer: | I think that you would have to have very small hands to be able to have a full grip on the handle to have "knuckle clearance" when mincing. I have to grip the handle without my fingers going all the way around to mince using the rocking method. The blade width is much narrower than another 6 inch chef knife that I have that allows a full grip with knuckle clearance for mincing. That said, I think that you can mince just fine with this knife, but you will have to grip it a little differently. |

Answer: | It's actually an 8 inch blade. They are advertising a 10 inch blade, but it's a bait and switch--you are getting the smaller (cheaper product). Like paying for an Acura and getting a Honda. I provided picture of the conflicting marking on the packaging (one saying 10 inch and a barcode for the 8 inch) and I submitted a picture of ruler measuring the blade, so buyers can see. It's a good knife, but buy it from a different seller who will send you what you are paying for. |
