Answer: | I have used this canner for water bath jam and it works great. Though it would be nice if it came with a separate lid for that- I was able to find a separate glass lid that did the trick. You could use the lid it comes with without latching (as a cover only), however I used to own one with a glass lid and I liked that feature. It’s just a personal preference though and won’t effect the end result. |

Answer: | Hmmm, I have a gas range, but I know smooth cooktops (aka glass top range) pose an issue for canning, particularly for pressure cooker canning. As I'm sure you know, pressure canning uses a higher heat level for foods that are lower in acidity, else the bacteria are not killed. My understanding is that a lot (but not all) of glass top ranges automatically shut off at higher temperatures, such as those involved in pressure canning. That shut off feature protects the stovetop from cracking, but it keeps the temperature too low for pressure canning. Answer: | Even though a magnet won't stick to this, you can buy an induction adapter plate which gets used kinda like a coaster for the pot. Instead of the pot getting hot by itself, the adapter gets hot and transfers that heat to the cooker. do a search here for induction adapter. |

The current recommendation from the United States Department of Agriculture indicates that to pressure can you will need to use a vessel that is specially a pressure canner, which holds at minimum four quart-size jars. Answer: | Respectfully, any time I've ever had problems over the decades with beans not cooking evenly it was invariably due to a batch of mixed old AND new beans. This happens more than you might think, and unfortunately a recent purchase of mine of small red beans in 25 lb. bulk are proving to be exactly that. Soaking an extra couple of hours seems to help a little (10 hours instead of 8) and then bringing to full heat and pressure a little more slowly, then pressure cooking one extra minute than you normally would. All those things together will help when old and new beans have been mixed together. |

If you would can carrots or beans, they are low-acid vegetables, they most likely be hazardous to your health because the canner does not get "hot" enough to control bacteria from growing in the jars. |

Answer: | there is a gauge in middle along with a button (in front on picture) when the steams starts coming out of the hole where the weight goes (the black piece next to gauge) you time it for 10 mins. then put the weight on and the pressure starts to build up. Once the pressure gauge reads 10 you lower heat on stove to keep the pressure steady at 10 then start to time (usually anywhere from 10-45 mins). When you are done turn heat off and wait until the gauge is at 0 and the front button goes down. Then slowly twist lid and remove by lifting the cover (tilting the back side first so steam doesn't burn your face). |
Question: | Does it come in 8-quart size? I love this pressure cooker but 6.3-Q is small for our family |
Answer: | The issue people have with using large vessels on glass top ranges is that if the vessel is larger than the burner ring, it could transfer heat past the area where the glass has been properly tempered for high heat (outside of the burner ring). This could cause a failure in the glass top surface. I would check with your range mfg as well as inly cook in a burner that is the same diameter as the vessel you're using. |

Answer: | I would not put in more than 9 regular mouth pint jars per level, for a total of 18 jars. When you put in 10/level the jars get wedged in and there's a risk of jars cracking, based on my experience. I've been canning for 50+ years and am on my third 23-quart pressure canner just my opinion. |

Answer: | 7 quarts jars. 10 regular mouth pints jars. I currently today have 20 pints of pork canning (i have an additional metal plate like the one that goes on the bottom ) 10 pints on the bottom and 10 on the top rack. You can not double stack quarts. This is the best canner I have owned |

Answer: | If this is made the same as my set (which is at least 15 years old) this is stainless steel with a vinyl coating and can be sterilized. If you can't sterilize your equipment then you run the risk of contaminating your product. The funnel can also be sterilized. |

Answer: | Not until I made the mistake of trying to can tomatoes in a Mirror pressure *cooker* that had been my grandmother's did I realized there is very much a difference between pressure cookers and pressure canners. This product is specifically for canning. While it would not necessarily be dangerous to cook meats in this 22 quart pressure canner, it is too big to be practical for that purpose. Seriously, this thing is huge. Nearly 1.5 feet deep.The one that had been my grandmother's (believe it was 12 or 16 quart) was suitable for the type of cooking you describe. Looking at the price differences, I understand your interest in this one as it is significantly cheaper. If you are going to make the investment for you stated purpose, however, I would stick with either the 8qt or 16qt. These are the sizes suitable for your cooking needs.It is worth noting: When I attempted to can tomatoes in a pressure cooker, several of the jars exploded and warped the pan, ruining it. The fact that every single safety feature worked and kept this from hurting anyone or damaging my kitchen is why I didn't hesitate to purchase a Mirro product again. Extremely satisfied with that decision after one long summer of canning. |

Answer: | I wouldn't. All of the USDA canning bulletins and the authors of "Putting Food By" say not to use anything larger than a quart jar. From what I understand, the temperature inside the food wouldn't be able to reach 240 degrees Fahrenheit, the temperature required to kill the various spoilage organisms. I don't think there's quite enough room at the top of the canner to let the pressurized steam circulate properly. On the other hand, those half-gallon jars are great for storing pantry items, such as flour and pasta. Place the dry goods in your freezer for a couple of days, pour them into the jars and put a bay leaf inside before you close the lid. This keeps grain moths away from your pantry items. Hehe. I'm planning on doing a batch of beets tomorrow morning. This is a good unit that I couldn't find in any of the hardware stores here for less than $131. I hope you buy one! |
