Answer: | I have put my cast iron pan in the oven along with the silicone handles, but I still had to use an oven mit. Each pan is different as far as what the max temperature allowed would be. I would look up the pan on Amazon and see what is said. |

Question: | what is the difference between this lodge pan LCS3 @ $25 and the lodge LK8S3 pan which is $15? Both are ten 1/2 inch pans look the same |
Answer: | the LK8S3 is 12" diameter, has more a sharper "corner" where where the sides join the bottom, has more vertical sides, and is 2" deep. the LCS3 is 10" diameter, has sides that are angled outwards more, the sides join the bottom in more of a curve, and is 1.75" deep. basically, it much easier to slide an omelet (or anything else, I suppose) sideways out of the LCS3 without breaking. |

Answer: | It sounds like you may have accidentally not cared for it correctly right at first. The nice thing about cast iron pans is that the rust problem can be fixed and it can be made just as good as new with a little elbow grease as long as you haven't let the corrosion go on long enough so that it causes pitting. What you'll need to do is remove the rust and any current seasoning with steel wool or something like that. When you remove the rust and seasoning, that is about the only time you might want to use soap along with the water, because the soap will help to remove the seasoning. You want to remove the current seasoning because you will be re-seasoning the entire pan and you don't want thicker parts of the seasoning or else the pan will become sticky or tacky in spots. Lodge seasons their pans with a canola oil spray. However, the best initial seasoning method I found stated to use Crisco (vegetable shortening). Their method worked extremely well for me. I don't remember the process to exacting details, but here it is to the best of my memory. First, heat the pan up by putting it in the oven at about your lowest oven setting of about 150F-200F for about a half hour or maybe a little more. This should make the pan pretty warm but not burning hot to the touch. Still take care in handling the hot pan to not burn yourself though. Before you start wiping the pan down with Crisco, turn the oven up to about 300F because the pan will go back in the oven. The first heating makes sure the pan is dry before applying seasoning and gets the pan just warm enough to spread Crisco over the pan and have the Crisco melt. Once the Crisco is spread all over the pan (inside and out) wipe it down some with a paper towel to keep the seasoning thin. You don't want too much seasoning on the pan. If the seasoning is too thick in spots it will get tacky at those spots. Place the pan back in the oven upside down with a sheet pan or sheet of aluminum foil underneath the pan to catch any oil drippings. After about 45 minutes, pull the pan back out and wipe the pan down again. You want to do this because the seasoning will drip downwards due to gravity and collect near the rim, etc. You want to wipe that excess off before it gets too dry and tacky. I can't remember if you sort of buff it at this point or at the end. I think you may want to buff it some with the paper towel at this point some. At the end it should have a somewhat dull black finish. But after you remove the excess, stick it back in for about another 20 minutes. Pull it out, buff it a little more if necessary and let it cool and the seasoning is done.At this point, your pan should be back to a nearly brand new state. My recommendation for the first few times you cook with it is to cook some chicken with the skin on or some bacon or something with some grease or fat to it. One of my grandmother's old cast iron pans stated "Chicken Fryer" on it. On one of my cast iron pans, the first couple of dishes I cooked in it was skin-on chicken. I used a little olive oil to cook the chicken in with the skin side down first. It was a chicken dish with olives, grapes and rosemary from the Smitten Kitchen Cookbook. After you cook the chicken on the stovetop, then it goes into the oven for a bit. After cooking that dish a couple times on the stovetop then finishing it in the oven, it gave my cast iron pan an amazing finish that looked like my grandmother had been cooking with it for 60 years. I think that the chicken fat from chicken skin, especially when cooked in the oven does an amazing job of helping to season the pan beyond the initial seasoning.Now after you cook your first dish, what I do is let the pan cool down some. Then I wash it down with plain hot water and no soap. If anything gets stuck to the bottom of the pan, I use this little 3" x 3" chain mail scrub pad. It gets the gunk off without damaging the seasoning. It kind of surprised me with it being metal. I thought it would hurt the seasoning but it didn't at all and it got the burnt on black gunk off pretty well if you have any. After I rinse it with hot water, I then just dry it off. I don't oil mine down or anything after that. If oil is added after cleaning it can become a gummy sticky mess with too thick of a seasoning that becomes tacky. Not to mention you can get oil all over where you store it. Instead, you just want to make sure you store it in a dry place right after you dry clean it and dry it off.For example, I once let some of mine sit on the counter close to the sink too long and the bottom of the pans started rusting. But when I let them cool and clean them off, dry and store them in a dry place right after cooking, I've had no issues at all with rusting.I wouldn't say there was likely anything wrong with your pan. You just need to get use to cooking with cast iron. Also as an FYI, avoid cooking foods with a high acidity at first until the seasoning is somewhat well developed. Acid can tend to break down the seasoning.PS - You don't really need to put it back on the stove to evaporate any remaining water. I've tried that and you really don't need to do that to prevent it from rusting. In fact, I think there is more risk to it than to not doing it. That's because if you're not careful you can overcook the pan with nothing in it and then you burn and ruin the seasoning. You can tell if you've burned and ruined the seasoning by how it will change the color of the pan from that nice dull black finish to this off colored spot on it. Then you have to go back and re-season it all over again. |

This handy 8-inch seasoned steel skillet is the only pre-seasoned and ready to use out of the box steel pan in the market place right now. Each skillet is pre-seasoned with natural soy bean oil. Maintains very low and very high temperatures, making the pan a highly effective and versatile cooking piece. It performs well in residential and professional kitchens as well as outdoors. Made of 12 gauge carbon steel. Steel is a high density metal that does not retain odors. If maintained correctly, it will last a lifetime. Thickness of the cooking surface allows the pan to heat up quickly but also retain the heat needed for even cooking. The handle angle is conducive for both stove top and oven cooking. Each handle is attached to the skillet with 3 secure rivets. The black patina given to the cookware by the factory seasoning process is, in fact, vegetable oil that has been baked into a piece of cookware that has emerged from an individual sand mold. This coating of oil is a functional application and not a cosmetic application. The cookware is hanging as it rides through the electrostatic sprayer and commercial conveyer ovens at very high temperatures. This allows the oil to penetrate deeply into the pores of the carbon steel which creates an easy release finish. As a result of this process, you may see a blister or bubble of oil at the southern-most point or at the end of the handle of the cookware piece. If visible, it will rub or flake off with your finger, leaving a brown spot. Don’t worry, it’s not rust but a seasoned spot that is brown, indicative of the varnish stage of seasoning. The brown spot will turn black with use. Made in the USA.

I wouldn't trust since you don't know where it came from. I got mine from the Lodge website. That would be a good place to check first. |

Answer: | The short answer is "not really". Both the Lodge Chef and classic skillets are made from cast iron. However, at 4.61 and 5.35 lbs for their Chef and classic 10.25 inch skillets, there will be about 16% less thermal reserve in the Chef skillet. When you put raw food into a hot pan, heat is transferred into the food. A heavier pan will retain more heat and more quickly return to the desired cooking temperature than a lighter one. This could affect cooking and food becoming stuck. |

Answer: | Yes. I recently ordered the classic 10” but returned it for the 10” Chef for the slightly lighter, about 12 ounce difference. Easier on the wrists and the sloping sides are more spatula friendly. Since this is a long term investment, it is worth spending more. However, if I had to do it again I would instead opt for the even more expensive Blacklock series, found on their website. This is slightly thinner and weight falls a bit under 4 pounds so even more wrist friendly. |

Pre-Seasoned for a natural, easy-release finish
Oil is baked into the pores of the steel at the Foundry to prevent rusting and to eventually provide a natural, non-stick like cooking surface. Unlike synthetically coated cookware, it is possible to restore the cooking surface of seasoned carbon steel.
Lodge uses a soy-bean vegetable oil to season our cookware. The oil contains no animal fat or peanut oil. The seasoning is functional application and slight inconsistencies may appear in the seasoning finish. The inconsistencies will not affect cooking performance.

Seasoned cast iron propelled Lodge from the position of a regional manufacturer to the national stage, with Good Housekeeping presenting a “Good Buy” Award for the product enhancement. Our appearance on the national stage expanded throughout the first decade of the new century, with record sales leading Lodge to the largest expansion in our history.
While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.
In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.
As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.
The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.
When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.
The Clean Water and Air Acts of 1970 led American companies to install new equipment to meet the pollution control laws. Lodge accepted the standards by replacing the old electric furnaces and adding a second Disamatic molding machine.
Not only did the updates meet the requirements of the Clean Air and Water legislation, by 1976 our automated processes produced as many molds in an hour as one man’s daily productivity 30 years earlier.
With the switch from antiquated electric furnaces to more efficient induction furnaces, 1991 proved to be a pivotal juncture in the green standards of Lodge Manufacturing Company. The use of magnetic energy to produce heat changed our status from a Large Quantity Generator of Hazardous Waste to a Small Quantity Generator, and we received the 1994 Tennessee Governor’s Award for Excellence in Hazardous Waste Reduction.
Today, Lodge Manufacturing Company maintains a zero hazardous waste stream foundry, earning accolades from the environmental and manufacturing communities.
Eleven years after in the introduction of seasoned cast iron cookware, Lodge broke ground for our foundry expansion. With completion of the first phase in the fall of 2014, the expansion includes a new melt system, an additional pouring/molding line and most importantly—new American jobs!

Answer: | Lip is about one half inch and rounded. I would never use this pan with more than a coating of oil. Using more could cause a spill and fire. |

Answer: | It is excellent for this purpose, but you should also consider the Lodge pizza griddle. I preheat to 500, insert my pizza on a pizza screen and then slide off onto the cast iron after 4-5 minutes. I lightly oil the screen but not the pan. The 14" griddle is a terrific pan for many purposes, and it retains higher heat even if you're only using a small part of the surface. Some people use it as a "pizza stone." I use both these pans very frequently. |

The cast Iron ware I use (1 vintage wagner bought at a yard sale, and 2 new lodge products) gets too hot and in turn heats the induction plate so high it turns off... Answer: | I don't know but I suspect the DeBuyer's pan is made from the kind of steel that a steel griddle is made of. The Lodge pan has a very slight dimpling to the steel and it is black and looks very much like a cast iron pan but the metal is much thinner. I have been very happy with my pan. It easily cooks delicate foods like fried fish. I suspect the DeBuyer's pan would also. |

Answer: | Luis,There are a number of differences. First, the pan is much lighter, as the thickness of the steel is much less than cast iron. This also means that it has less "heat inertia." It heats up more quickly and evenly, and cools down faster when removed from heat, giving you much better control of the cooking process. It is very sturdy. An advantage it has over stainless steel (besides being cheaper) is that, like cast iron, you can use it at very high heat without damaging it. This makes it perfect for high temperature searing. These are the only pans I use for searing meat and fish and then finishing in the oven (yes, perfectly oven safe). As they are pre-seasoned, they start with a stick-resistance, and if used properly and NEVER cleaned with soap, they becoming surprisingly "non-stick". I sear at very high heat (you do need some oil), and all I need to do is run hot water over it, wipe it out, and maybe rub a little oil in using a paper towel. |

Answer: | I have the 12" version of this pan and use it for 4 eggs over easy at least five days a week. However, there is a learning curve with this pan and you will need to spend some time properly seasoning it and maintaining that seasoning it. When I first started using it I cursed it every morning but forced myself to adjust to it as I was coming from a nice Teflon pan. That said, for the value cast iron will also be terrific and honestly is a little more forgiving ( just remember to keep the heat on both pans a lot lower than you are properly used to and let them preheat: I go about 2 min. On medium and then reduce to just a hair under medium low on my gas range for another 2 minutes before adding butter and then frying the eggs). The 12 inch version is a must if if you are cooking for more than one. I also use it for scrambled eggs and omelets for which it now does a good job after having been seasoned well beyond what comes from the factory. |

Answer: | Works great on our induction cooktop on either side. Heats very rapidly if you want, but of course the way to heat cast iron is slowly so it comes to the temp you want to cook at. Cast iron is of course way better than the clad cookware that can get loud from vibrations as the different layers absorb the magnetic energy at different rates. This also doubles as a great defrosting plate from stuff from the freezer. Your great-great grandchildren will be glad you bought this as they're using it. |

Seasoned cast iron propelled Lodge from the position of a regional manufacturer to the national stage, with Good Housekeeping presenting a “Good Buy” Award for the product enhancement. Our appearance on the national stage expanded throughout the first decade of the new century, with record sales leading Lodge to the largest expansion in our history.
While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.
In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.
As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.
The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.
When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.
The Clean Water and Air Acts of 1970 led American companies to install new equipment to meet the pollution control laws. Lodge accepted the standards by replacing the old electric furnaces and adding a second Disamatic molding machine.
Not only did the updates meet the requirements of the Clean Air and Water legislation, by 1976 our automated processes produced as many molds in an hour as one man’s daily productivity 30 years earlier.
With the switch from antiquated electric furnaces to more efficient induction furnaces, 1991 proved to be a pivotal juncture in the green standards of Lodge Manufacturing Company. The use of magnetic energy to produce heat changed our status from a Large Quantity Generator of Hazardous Waste to a Small Quantity Generator, and we received the 1994 Tennessee Governor’s Award for Excellence in Hazardous Waste Reduction.
Today, Lodge Manufacturing Company maintains a zero hazardous waste stream foundry, earning accolades from the environmental and manufacturing communities.
Eleven years after in the introduction of seasoned cast iron cookware, Lodge broke ground for our foundry expansion. With completion of the first phase in the fall of 2014, the expansion includes a new melt system, an additional pouring/molding line and most importantly—new American jobs!

My problem was my own doing - I presumed all grooves on cast iron pans were the same and our grill pan is an Emeril; the Lodge scrapers do not fit, sadly.......sigh..... |

The grooves line up decently but the scraper doesn't even reach the bottom of the grill pan where all the gunk is. I would recommend the chain mail cast iron scraper. It works wonders for regular cast iron....and with a little elbow grease and a quick soak in warm water it works great on grill pans too. It's sold on Amazon. :) |

Made out of some sort of composite hard plastic (should not be used on hot grill ever) which is quite resilient and easy to clean. There are two separate cleaning edges. Each has different sized and gapped "teeth." Here are the measurements:Side one: Four teeth each 1/2" wide. Gaps measure 1/4" wide.Side two: Six teeth each 1/4" wide. Answer: | I do not recommend using a dishwasher with these pans.. You need to keep these pans seasoned. They are easy to keep that way by rinsing your pan out , clean with mild soap if needed then dry pan. once the pan is dry use a tiny few drops of oil and spread all through the inside of the pan with a paper towel, then store away. This will keep your pan rust free and ready for your next meal. |

Answer: | I don't know if they've recently changed the design of these pans, but I just got the 8 5/8" size and the diameter of the cooking surface (the INSIDE flat bottom) is only 5 3/4" not 6 1/8". I'll need to send this back for an exchange. Really wish there were full accurate measurements somewhere. By the way, I also have the 11 7/8" size and the cooking surface is 8 7/8", not 9 1/8". I suspect the measurements from Matfer are for the OUTSIDE bottom of the pans. |

Answer: | YES. I bought this pan to sear steaks. It holds 3 or 4 NY strips, depending on size. The problem is that the iron itself is not what sears a steak... the oil in the pan is what sears. Problem is the center of my pan is domed upward, so that the oil immediately runs off to the very edges of the pan. So the whole time I have to be tilting the pan to run the oil fron one edge, through the steaks, and then the oil keeps going to the other side. I did not abuse it or put cold water on it soon after cooking. Many, many other reviers also notice the dome in the middle. THERE IS A FIX!! Take 4 or 5 7"-9" long pieces of 2x4 wood. Arrange the wood pieces in sort of a circle around a 6" empty space in the middle, on concrete or hard dirt. Have at hand a rubber mallet hammer such as TEKTON 30501 here on amazon. Heat the pan up to the smoking point of grapeseed or avocado oil (I use avocado which smokes at 520F). Or even 30 to 60 seconds past smoking point. Now, place the pan facing up in the center of the wood ring you prepared. Put a 5-6" square piece of folded aluminum foil in the center of the hot pan (so that the rubber in the mallet does not stick to the hot pan) . Now, use the mallet to pound the center of the pan really hard, several times. Then use a straight piece of wood of about 6" to check to see if it still rocks, meaning you haven't hit it hard enough or enough times because there is still some dome. Repeat a second time. If it is still domed, heat it up again on the stove because at this point it is too cold to try again. This time, after the pan is hot again, pound harder, I mean really hard. Then check to see if the dome is gone. I was about to throw out my Lodge and replace it with De Buyer or Matfer because of the dome, but I fixed the Lodge's dome and didn't have to throw it out. |

Answer: | 1. season your salmon with some oil seasoning paste (oil + seasoning+ salt+ other spices of your choice). Let rest for 10-15 mins for the oil seasoning paste to be absorbed into the fish. If you don't like highly-seasoned foods, then make sure you buy good quality salmon, and you can just season it with some salt and a thin layer of oil, then adding some fresh lemon juice before serving. If you want to skip the oil too, then you need the part of the salmon that has more fat)2. Heat the pan until very very very hot, you don't need to put oil into the pan.3. Use medium high heat. Put the fish with the side you want to present on the plate DOWN. Seal for 2-4 mins depending on the thickness of your salmon.4. Flip the fish when you see the meat is almost half way cooked (you will notice the cooked part has a slightly different color)5. Turn OFF the heat or turn the heat down to low, because the heat from the pan will cook the meat for you and this process will prevent from over-cooking your fish.6. Cook for about 2 to 3 mins or until you see the color of the fish meat is slightly pinkish and when you press the fish with your finger the meat will not bounce back.7. Serve with some freshly cut lemon wedges, the squeeze the lemon juice on the fish before eating. |

Answer: | Cast iron cookware is my favorite! I usually just rinse with hot water and use a mild scrubber on mine. After some time, however, my cast iron gets buildup on the sides - I put the pans in the self-cleaning oven and they come out like new. They do have to be re-seasoned but that doesn't take much effort. I'm sure it would work fine on this ridged pan that is sure to be more difficult to clean. |
Question: | how does this compare with the much more expensive enamel coated version? and why |
Answer: | Much better. I have this Lodge and the LC enamel version. Trust me on this - never buy this style pan with enamel coating. Grill type pans are more difficult to clean because of the ridges, nooks & crannies. Because cast iron seasons better and becomes more non-stick than enamel, it is MUCH easier to clean with use. My LC is in the garage awaiting disposal. I love LC, but their grill pans should be avoided. |

Cooking And Caring For Your Lodge Seasoned Cast Iron
Caring for your cast iron doesn’t have to be complicated. Lodge cookware comes already seasoned and ready to use, so you can make your family's favorite recipes right away. You can use it on any heat source, from the stove top to the campfire (just not the microwave!). The more you use it, the better the seasoning will get.
- Wash cast iron by hand with mild soap or none at all
- Dry promptly and thoroughly with a lint-free cloth or paper towel
- Rub with a very light layer of vegetable oil, preferably while the cookware is still warm
- Hang or store cookware in a dry place
