Question: Can the 24x48 be cut
Answer: Providing you have the right equipment, I don't know why it couldn't be cut. Mine was a 'second,' meaning it was a return to Amazon's warehouse. It was returned because it was damaged in shipping (had been dropped on 2 of the 4 corners). My husband was able to sand out the damage and it's good as new. We're moving soon and it's too large for where we want to use it in the new house, so he's planning to cut down ours as well.

Answer: Not sure if this answers your question or not but here it goes: The bottom diameter measures 3 1/2" and is notched to lock into place. The top diameter measures 8 1/2".
Question: does the grain run length wise or vertically, assuming the longest sides of the rectangle are horizontal
Answer: Don't know why you wish to size down but I would imagine a stainless steel 4.5 would work with your artisan 5 qt. mixer. Some have tried the glass bowl and said it works. .5 qt. = 2 cups more of flour etc. so I think it should not be a problem. Besides the 5 qt. mixer you have may have more watts to handle the mixing with ease in a 4.5 qt. mixing bowl.
