Answer: | Hi Sticking will occur when: 1/the stone is not hot enough, this is the main reason of sticking. In the convection oven without heating tubes, it will take longer to preheat. We advise you to turn on the top broiler and put the stone on top rack to preheat with the highest temperature of your oven. Maybe you can burn the stone on burner, and it will heat up much quickly. You can also use infrared thermometer to get the temperature. If the temperature lower than 450F, the pizza may won't have brown bottom, even turn out to be sticking. It's hard to tell the accurate preheating time of reaching that high temp because it always depend on the performance of the oven or grill. One hour probably not enough in some ovens which can't reach their indicated temp. Infrared thermometer will show you the right way. 2/ the dough is too wet. For this, dusting some flour or cornmeal with your dough is useful, you can also put parchment paper on the stone to prevent sticking. |

Question: | what does everyone like round or square |
Answer: | Personally I prefer the Square / Rectangle. I quess it comes down to what you're using it for; we do a lot of bread making which results in multiple loaves / rolls baking at the same time. It's much easier to place multiple items on a Rectangle than a round stone; especially if you're using a pizza peel to place the items (perhaps on parchment paper)on a hot stone in a hot oven. If you were only baking a single item at a time the round stone would probably be ok. In my opinion having a rectangle gives you more flexibility. Happy. Baking! |
Question: | Would I do the same pre-heating with the charcoal grill? I am not sure if the charcoal grill will hold 400+F for 25 mins straight, plus more. Advise |
Answer: | I would definitely preheat the stone with the grill, but I don't know how long your grill can hold the temp. Pizza cooks best at higher temps, so I try to heat my grill and stone to over 500 for at least 30 minutes. |

Answer: | This pizza stone is made from a very high quality proprietary blend of minerals mainly consisting of cordierite. Cordierite is a magnesium iron aluminum cyclosilicate which occurs naturally in contact with peltic rock formations. It is also found in conjunction with granite magmas and a host of other geological formations. With the geological stuff out of the way, we use it in our product because of its superior durability when used in high heat applications such as kilns and of course pizza stones. It is certified safe to use by the USDA, the EU, ROHS testing and German LFGB testing. Cast Elegance selected this as our product because it is very tough and will not break like the last 3 stones I bought. 14 inch Round or 16 inch Round | How Do I Choose the Right Size?
Choose the right size for your oven by measuring the shortest useable side of your oven rack.
If your rack slopes upwards at the back of your oven, omit that space from your measurements.
Most ovens will only accommodate the 14-inch diameter round stone or the 14 x 16 inch rectangular stone. The 16-inch round stone will not fit many ovens.
How Do I Clean My Cordireite Pizza Stone for Oven?
Never clean with soap or chemicals!
Always dry well in the oven before using. If chemicals or soap are used, they will soak into the stone and create an odor when they are heated. Also never season the stone with oil. The oil will soak in and create a smell when it burns off. Store the stone in the oven when not in use. It will keep the stone safe and dry and will actually improve the temperature profile of the oven and help the oven perform better.
Why Does My Pizza Baking Stone Have Stains?
Stains are normal and in fact over time, the stone will have many more marks and spots from use. Think of it as a wonderful patina of memories of all the great food that you have made. A well-used stone will be a beautiful mottled black and brown from the oils from cheese and crusts and baked things that it has created. This is all good and should be expected. The marks and stains will not affect the performance or function of the stone. All porous type cookware such as this and pottery cookware will stain with use. Many cooks even prefer a stone that has been used for a while!

Answer: | just under a 1/4 inch. I used it for making small pizza pies. Better off shaping into a rectangle and facing the narrow end facing the front of the oven. It is very easy to slide some of the pizza off the back if you have it the other way. Worked great for sausage rolls too. |
