Answer: Ramen noodles are made of wheat not rice. Big difference between regular pasta and ramen noodles are kansui (alkaline solutions, sodium carbonate and potassium carbonate) that is added to the noodles. Those alkaline solutions add texture and flavor to the noodle. So there are no such thing as organic ramen noodles. You might just want to call that pasta soup. Vietnamese dish call "pho" uses rice noodle which is not ramen.
