Answer: | We set our own limits at 10mcg per 100g. Pasta is 57g per serving or 5.7mcg and we test our rice to make sure we are under those levels. This is the standard we found on the World Health Organization. We tried to find a standard in the US to compare this with and came up with the following information: Currently, China is the only country to have modern levels of how much arsenic is permitted in food, and has set the limit at 0.15mg of inorganic arsenic per kg of food. The US and EU have no standards for arsenic levels in food, but the US has a 0.01mg/liter limit in drinking water. The World Health Organization (WHO) has also placed a provisional level of 0.01mg/l in drinking water. As I mentioned, a serving size of brown rice pasta is 57g. That translates to .006 mg per serving or .11 parts per million. One thing we did learn in testing is that arsenic is water-soluble so when you cook pasta, about 50% of the amount in the dry product ends up on the cooked, the rest is rinsed away with water. It is best to cook rice in abundant water too. |
