This isn't much of a problem if you're cooking on the stove; either cook it separately as you would pasta or partially cook it then add it to the rice (getting the water right can be tricky). Personally, I don't mind the under cooked texture of wild rice mixed with fully cooked white rice, so I just cook them together. |

Cooking Royal Blend Rice
1 ½ cups water
½ teaspoon salt (optional)
1 teaspoon butter or olive oil (optional)
1 cup rice blend
Bring water to a boil. Add salt and butter or olive oil, if desired. Stir in rice blend. Cover with lid; reduce heat to low and simmer 15 minutes. Remove from heat and let stand (covered) 5 minutes. Fluff with a fork and serve. Yields approximately 2.5 cups.

Red Wine Braised Duck
Preheat oven to 325˚F. Pat duck dry with paper towel. Season with 1/2 tsp each salt and pepper. Heat 2 tbsp butter in large Dutch oven set over medium heat; cook duck for 3 to 4 minutes per side or until golden brown all over. Transfer duck to plate. Drain all but 2 tbsp duck fat from pan.
Add remaining butter to pan; cook pearl onions for 3 to 5 minutes or until golden brown. Transfer to plate.
Add pancetta; cook for 3 to 5 minutes or until crispy around edges. Stir in carrots, celery, leek, garlic, thyme, rosemary, and remaining salt and pepper. Cook for 2 to 3 minutes or until slightly softened. Sprinkle flour over top; cook for 1 to 2 minutes or until smooth. Stir in tomato paste; cook for 1 minute.
Slowly stir in wine; bring to boil. Stir in raisins, cinnamon stick, bay leaves and cloves.
Reduce heat to medium; simmer for 15 minutes. Stir in tomatoes and broth; bring to boil. Return duck and pearl onions to pan. Cover and transfer to oven. Bake for 1 to 1 1/2 hours or until duck meat is very tender.
Meanwhile, prepare rice according to package directions. Serve duck and sauce over rice. Sprinkle with chives.
TIPS
• A fruity Merlot or a rich Amarone wine are good choices for this braised duck. • Serve with French green beans if desired.

Creamy Mushroom Wild Rice Recipe
In a large skillet, saute onions and mushrooms until tender. Cook and stir constantly. Add minced garlic and cook until fragrant. Season the vegetables with salt, pepper, and vegetable seasonings.
Add vegetable or chicken stock as per your preference and bring it to a boil. Then, add rice to the pan and simmer the flame. Cover the skillet with a lid and cook the rice for 15 minutes. Remove the pan from the heat and allow the rice to stand for 5 minutes. After 5 minutes, stir in the heavy cream and parmesan cheese. If desired, garnish it with remaining Italian seasoning. Sever hot, enjoy your healthy meal
