Also if you soak, rinse, and put in a sprouter or bowl with paper towels growth begins in a few hours so even without the physical sprout it still has the benefits of a sprout. How to Cook White Millet Proso
Hulled whole grain millet has a rich nutty and mildly sweet flavor. Because of this, the grain tastes fantastic in a variety of sweet and savory dishes. In fact, replacing grains in the recipe with this one can make the dish taste much better.
There are many ways to use millet; it is easy to cook; hulled millet doesn’t need pre-soaking and cooks in less than 30 minutes.
Try to roast dry grain in a pan or skillet for about 5 minutes and add water or broth. Use two parts of liquid per 1 part of the grain. Increase the amount of water to three parts if you want to enjoy pure millet taste in a porridge.
After adding water, bring the pot to a boil and turn down the heat to simmer right away. Do not often stir as hulled millet grain is very tender. Let it simmer for about fifteen minutes, so all water is absorbed. Then, let the pot sit covered for ten minutes and fluff up the cooked grain using a fork.

Ingredients:
- 1-2 cups cooked hulled millets, 1 cup packed parsley leaves
- Handful mint leaves, 2 tomatoes
- 1 garlic clove, Juice from 1 lemon
- 2 small onions, Salt, as desired
- Olive oil, as desired
Preparation:
- Roughly chop all the veggies, then pulse in your food processor until they are finely diced. You can also finely chop them by hand... but a food processor saves a lot of time and does the job just as well.
- Mix the sliced veg and hulled millets together then season with olive oil, salt and lemon juice as you like! Enjoy.

- Parsley, chopped, Coconut oil, for sauteeing
Preparation:
- Mix thehulled millet into the boiling vegetable broth and simmer over low heat, covered, for 7 minutes. Leave to swell for an additional 10 minutes.
- Add the flax egg and the flour and season as desired. The batter should stick together. With moistened hands, form your patties.
- Place a pan with the coconut oil and fry the loafs from both sides in a crispy golden brown. Serve with salad, tomato sauce, and parsley or serve in a sandwich.
Millet-Stuffed Red Peppers
Ingredients:
- 1 cup hulled millet, 4 cups water
- 4 cubes vegetable bouillon, 5 medium bell peppers
- 3 medium tomatoes, chopped
- 1 (15 ounce) can black beans, drained
Preparation:
- Combine thehulled millet, water and vegetable bouillon in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed.
- Slice the tops off of the peppers, and remove the seeds and cores. Set aside. When the hulled millet is done, stir in the tomatoes and black beans. Spoon into the peppers until filled. Place the peppers into a glass baking dish, and cover with plastic wrap.
- Cook in the microwave for 10 minutes, or until peppers are tender. Turn peppers every 2 to 3 minutes to ensure even cooking.
