Answer: | yes, raw buckwheat groats will sprout. (buckwheat which has been toasted will not.) I have soaked mine overnight and up to a day, then rinsed well, and they will sprout just fine after a couple of days, depending on the temperature. |

Answer: | Prop 65 applies to anything that may contain a chemical (and California lists hundreds of supposedly cancer-causing or cancer-contributing chemicals in their warning list) that is exposed during the growing, manufacturing, processing, irrigating, packaging, labeling, and transporting of a product. So, while Anthony's is organic and supposedly doesn't use harmful chemicals in the growing of its buckwheat, chemicals on the Prop 65 list may (and I emphasize "may") come in contact with the buckwheat. It could be a chemical in the air surrounding the buckwheat growing fields, it could be a chemical in the ink of the 5 lb bag, it could be fumes and exhaust from the vehicles that transport the buckwheat to market, or it could be chemicals in the water or equipment used to process the groats for packaging. Anthony's, like nearly every other business in California, includes the Prop 65 warning on its bags to be on the safe side and greatly reduce its chances of a frivolous lawsuit or investigation from the State. I guess you could rinse and then dry it really well before milling it into flour.It shouldn't taste bitter, especially if it is not expired or near the expiration date. Some pieces of grain or nuts do happen to taste bitter sometimes in an otherwise fresh and good tasting batch. |

Answer: | I bought mine in July of 2020. The marked expiration date is 10/2021 so it is at least 15 months and probably longer. The shelf life of grains like this usually limited by how long one can keep bugs out. Storage life in a glass or hard plastic container with airtight lid in a cool, dark place can be decades (or in my case, until I move to a new home). |

My wife, from Russia, claims that this tastes exactly like the kasha that she ate as a child, because it is. |
