Answer: | According to America's Test Kitchen or Cooks Country, yes. One of those shows actually featured Mrs Abraham "Mary Todd" Lincolns' Pecan Pie Recipie. Of course in that time, there was no Karo or HFCS. Maple syrup, honey and molasses were the only "liquid" sugars available so... I'd recommend researching that recipie. She was a "Southern Belle" from Virginia and quite fond of Pecan Pie. |

Answer: | It should be refrigerated after opening. Any pure maple syrup can mold if stored at room temperature. Just take it out of the refrigerator a while before you intend to use it. |

Answer: | As of Jan 1, 2015, Vermont has adopted new international grading standards, and the new grades are as follows; Grade A Golden Color with Delicate Taste (formally “Grade A - Fancy”), Grade A Amber Color with Rich Taste (formally “Grade A - Medium Amber”) and Grade A Dark with Robust Taste (formally “Grade B”). If you are looking for formally “Grade B” syrup, it has been re-named “Grade A Dark Robust”. It is the same exact syrup, but with an updated name. Foaming does not necessarily happen when boiling sap, but when it does, it can also be skimmed. |

In 1887, the first breakfast syrup that wasn’t pure maple was introduced. It was made of 45% maple syrup and 55% corn syrup. Because it was less expensive than real maple syrup, it became an instant hit. By the 1990s, most imitation syrup brands had eliminated maple syrup from their products entirely, opting to use high fructose corn syrup (HFCS), artificial flavorings and artificial colors instead. As a result, labeling laws in the United States were enacted to prohibit artificial syrups from using the word maple in their names.
