QUICK SOAK:

In a large pot bring water and beans to boil. Boil for 2 minutes, remove from heat, cover and let stand for 1 hour. Drain water and rinse beans.

OVERNIGHT SOAK:

In a large pot let beans and water stand overnight or at least 6-8 hours, drain water and rinse beans.

COOKING INSTRUCTIONS

  1. Add water into a large pot to already drained and rinsed beans.
  2. Heat to boiling then simmer gently for 1-1 1/2 hours or until desired tenderness is reached.
  3. Add salt and preferred spices (optional).

The acid in the vinegar will neutralize the alkaline and eliminate the smell. Then rinse, drain well and add to your favorite recipe. They are particularly good in soups. Answer: Hi there, Good question, especially with the store shelves being stripped of every single bean. It is said the shelf life is 1 to 2 years. I personally have found they last about a year. After that, they get so hard and dry they just won’t cook. Ive tried to cook old beans myself and after12 hours and they were still like rocks. I didn’t add salt because that can also cause beans not to cook. So I would recommend using them within a year. I cook a large pot full when they are fresh and then freeze them. You could probably can the cooked beans too, I haven’t tried that yet, you probably need a pressure canner, they are likely considered a low acid food. Hope that helped.

Answer: There are (8) 5oz (drained) packages in the box. Each package is two small or one generous serving. The nutritional information however states there are (12) servings per box which is rather frustrating.
