Burgers: Season ground beef patties with salt and pepper. Add a tablespoon of canola oil to a large skillet. Cook burgers over medium-high heat to the desired doneness (about 8-10 minutes). Top with 2-3 tablespoons of the pimento cheese spread. Cover and let the cheese warm slightly.

Fried Green Tomatoes and Bread & Butter Pickle Slices: Slice tomatoes 1/4 inch thick. In a bowl, whisk the eggs and milk. Scoop half the flour onto a plate. Mix cornmeal, bread crumbs, half the flour and salt and pepper on another plate. Coat the tomatoes and pickles in flour. Next, dip them into the milk and egg mixture. Finally, dredge in breadcrumbs to completely coat. Pour 1/2 inch of vegetable oil into a large skillet and bring to medium heat. Fry the pickles and tomatoes on both sides in batches of 4 or 5.

BBQ Bacon Mayonnaise: Cook the bacon in a skillet, turning occasionally, until crisp. After draining, finely mince the bacon. Combine the mayo, slightly warm bacon fat, BBQ sauce and sour cream in a small bowl. Add the bacon, chives, salt and pepper. Cover and refrigerate until ready to use.

To assemble, add shredded lettuce and BBQ mayo to the bottom of a toasted bun. Then add the pimento cheese-topped burger. Finish with 2 slices of green tomatoes and pickle slices.

Ground Beef Meatball Pho

Broth: Place the beef stock in a 5-6 quart pot and add garlic and onion. Tie the anise pods, cinnamon stick, cloves, peppercorns and ginger in a cheesecloth or spice bag and add it to the soup. Stir in sugar, salt and fish sauce. Cook on medium-low heat for about an hour. Remove the spices and strain the broth using a very fine strainer or cheesecloth. Keep the broth hot to cook the meatballs in.

Meatballs: Combine all of the meatball ingredients and mix well. Cover with plastic and chill in the freezer for 30 minutes to 1 hour. Once chilled, place 1/4 of the mixture in a food processor, processing until it is a completely smooth but firm paste. Transfer the paste to another bowl. Repeat the process with the remaining beef, processing 1/4 at a time to avoid overloading your food processor. Cover the blended beef and chill in the freezer for another 30 minutes. Remove the beef mixture and, using slightly wet hands, form into meatballs slightly smaller than the size of a golf ball. In a few batches, place the meatballs into the simmering Pho Beef Broth and allow them to float and cook for 7-10 minutes. Remove the meatballs from the broth, transferring them to a bowl. Prepare to serve immediately.

Noodles: Using the directions on the packaging, cook the noodles slightly under or al dente.

To assemble, divide the cooked noodles into four bowls and top with baby bok choy (cut in half). Then add 3 meatballs to each bowl. Ladle very hot broth over the noodles, bok choy and meatballs. Garnish with Sriracha, Thai basil, bean sprouts, cilantro, fresh mint and lime wedges. Serve immediately.

  1. Marinated Cucumbers: Whisk together 2 tablespoons of sugar and 1/2 cup of rice vinegar in a medium bowl until the sugar is dissolved. Stir in 1 cup of diced seeded cucumbers; place the mixture in a food-safe plastic bag. Close the bag securely and marinate in the refrigerator for 1 hour.
