Answer: | This is my Tapioca pudding recipe. In a small saucepan, I combine 4 tablespoons of this small pearl tapioca, 2 1/2 cups milk, 1/3 cup sugar plus a tablespoon sugar, and 1 beaten egg. Let this sit and soak for 30 minutes. Then bring it to a full boil, stirring constantly. I let it boil hard for a minute or so. Then, remove from heat and add 1 teaspoon vanilla extract. Stir well and let sit for 20 minutes. I like it warm with a shortbread cookie. Hope you enjoy! |

Then I let it sit with the heat off in the Pot with the heat off for an hour still stirring gently. I strain it and then use within a day. It does not store well in the fridge once it is cooked. So only make what you will user that day. |
