Answer:	There are a lot of motorcycle audio installers that have the programming tool that will flash your radio. I’m not sure if they will do it at a Harley dealership or not. I work at bike rallies and the best Harley audio installers that I know is “SOUNDZ”. Their main office is in Daytona, FL. They travel to all the major events. They will be in Sturgis in August.

“COLD” FISH CRACKERS:

Why is refrigerating the fish before baking them so important? It helps them keep their fishy shape! We roll out the dough straight from the food processor because the warm butter in the dough makes it soft and pliable. But when we tried baking the crackers right after cutting them out, they looked more like blobs than fish. Refrigerating the dough makes the butter firm up again. That way, when the fishies hit the oven, their fins stay fit!

Step 1

Transfer dough to lightly floured counter. Gently knead dough together, about 20 seconds.

Step 2

Use rolling pin to roll dough into rough 10-inch circle, about 1/8 inch thick, rotating dough a quarter turn and reflouring counter between rolls as needed.

Step 3

Use fish cracker cutter to cut out fish as close together as you can.

Step 4

Place fish on parchment paper–lined baking sheet (they can be close together but not touching).

Sear Scallops for Tender, Golden Results

How often have you enjoyed a fabulous seared scallop dish in a restaurant -- one that boasts scallops with caramelized, golden crusts and tender, barely translucent centers--and wondered how to replicate it at home?

For golden-brown and juicy scallops that rival those made on the most powerful restaurant range, we seared them in a smoking-hot skillet, then finished them with a butter baste. Purchase large sea scallops rather than smaller bay scallops, which are far too easy to overcook. We recommend buying "dry" scallops, which don't have STP (a solution of water and sodium tripolyphosphate that chemically treats the scallops to have a longer shelf life and more retained moisture) added.

Step 1

Remove crescent-shaped tendon from each scallop.

Step 2

Place scallops on rimmed baking sheet lined with clean dish towel. Place second towel on top and press gently to blot liquid. Let sit for 10 minutes.

Step 3

Cook scallops, in batches if necessary, in single layer without moving them in preheated non-stick skillet until well browned.

Step 4

Add butter and flip scallops; cook, tilting pan and basting with butter, until centers are opaque, removing them as they finish cooking. Tent with aluminum foil on serving plate while finishing with remaining scallops.
