If you add mirin to your rice as soon as it is done cooking then let it cool down until it is room temperature it makes the rice sticky and the balls hold shape. We use the Kikkoman Aji-Mirin because it is easily available where we live. Hot or cold rice does not work well. When we add the mirin that is when we also add any spices we want such as sesame seeds, nori flakes, or bonito flakes.
