Ale yeasts are more heat tolerant as lager yeasts should be used below 65° F. I live in Louisiana and currently it's almost 100° F outside. I keep our AC set at 75° F and set my glass fermenter inside another plastic fermenter with two or three blue ice packs and a damp towel draped around the top of the carboy. This keeps me well within the optimum fermenting range. I change out the blue ice everyday and re-moisten the towel. When the discoloration is only missing the primary color blue, the discoloration will move to the original color by gradually by adding small amounts of blue.
