There’s so much to love in this nutritious and delicious recipe, including beets, goat cheese, pistachios, organic quinoa, and brown rice. It’s a great way to start a meal-or enjoy it whenever you’re in the mood for an incredible salad.

Prep Time: 15 minutes Total Time: 40 minutes

Servings: 6.

Directions

1. Heat oven to 400°F. On large baking sheet, toss beets with oil, salt and pepper.

2. Roast 30 to 40 minutes, stirring twice during roasting, until beets are tender. Cool slightly.

3. Meanwhile, whisk together all Vinaigrette ingredients.

Answer: I'm assuming you mean "yard long beans". If so, I've seen them many places. They have become rather common in recent years. Search for "yard long beans" or "asparagus beans". Question: How long do they take to mature
Answer: Depends on environment. I have used them only in educational settings. They begin almost immediately to sport in plastic bags with moist paper taped to sunny windows, are ready within 10 days to transplant into paper cups, and then grow immensely with leaves, blooms, and BEANS within 3 - 4 weeks. I hope this is helpful, from a person in summer in Northern climate.
