I use my ice maker crumbs with cold water and fill it to the line mark inside the crock. My family is really impressed by how soft the butter is on their toast/muffin in the morning. Just remember to use 1/2 stick of soft real butter. (No margarine) Press in the mold. Make sure not to leave any air pockets. I've been changing the water every 2 to 3 days. But.... yes - the headshell/cartridge combo comes premounted. If you buy the cartridge alone, you must mount it to your headshell. This orange cartridge is a step above the green one made by Audio Technica.
