Answer:	No they are not as thick as dry egg noddles. They are thinner and rather fragile uncooked. But when cooled, they have a nice texture enough to please and satisfy your craving for pasta when you are watching your carbs.

I am reading the ingredients and here's what's listed on the package: Idaho potatoes, salt, sunflower oil, nonfat dry milk, monoglycerides, calcium steroyl, lactylate, spice, artificial color, artificial flavor, freshness preserved by sodium acid pyrophosphate, sodium bisulfite, citric acid, and mixed tocopherols. More than you wanted to know but looks like potatoes - milk, salts, and oils. My little dog who is a rescue, (sweetest dog:) has to take pill and sometimes I give them to her inside a bit of these mashed potatoes. Does not upset her stomach and she's on a special diet. So no, I don't think soy is in this.

1. Saute 3 diced carrots and 1 diced yellow onion in olive oil.
2. Add two 32 oz packages of vegetable broth and heat thoroughly.
3. Stir in one 4 oz package of Roasted Garlic Mashed Potatoes.
4. Once heated, add two 15 oz cans of white kidney beans and one 5 oz package of baby kale.

Instructions

1. Prepare Roasted Garlic Mashed Potatoes according to package directions.
2. In a large bowl, combine the potatoes with ½ cup coarse cornmeal, ¼ cup Parmesan cheese and salt and pepper, using the back of a large spoon. Knead with hands if necessary to bring the dough together.
3. Divide the dough in two. Scatter extra cornmeal onto a workspace and begin rolling and shaping into a long sausage about 1.5-inch thick. If the dough is crumbly, bring it back together and continue shaping.
4. Cut into 1.5-inch pieces, coating the dumplings in cornmeal on each side.
