Answer:	The iron handle has a high heat resistant epoxy finish, which can withstand the extreme heat of up to 600° Fahrenheit. Years into it (in the foodservice market), we never ran into any issue. The line comes with a lifetime warranty. Carbon steel, by nature and as opposed to stainless steel, rusts if not kept dry after use and wash, and that is sometimes the misunderstanding. As a mom to two toddlers, it was important to me to develop custom hand designed bags for little ones which are food safe but can also be easily repurposed to store art supplies, makeup and cosmetics, or as a travel bag when we are on the go. Answer:	Carbon steel , and nicely made. Season it properly and nothing will stick. Takes on a brown to black patina. I love these pans and do not use stainless steel or teflon anymore.
