Answer: | Because the plastic dasher/paddle gets warped (at first I thought it was from washing the paddle in the dishwasher, but I'm on my second machine after maybe five years and washing it in hot water after using it seems to have done the same thing so perhaps it's just from use) and so it doesn't revolve "flatly" in the circular groove in the clear plastic cover when it's placed on top. I find that eventually it seems to settle down and revolve evenly without any wobbling, so to speak. Rather than use tape, I've used a small but heavy pan with a base a bit larger than the top of the machine set on top of the clear plastic cover until it's revolving evenly - maybe the first five minutes of use. Other than that, and the need to use a hard - but not too hard: it has to have some flex - plastic utensil to remove the last of the frozen ice cream from the interior bottom and sides of the freezer bowl because it's made of aluminum and scratches incredibly easily, it's a terrific unit. |

Answer: | Quality ice cream from plain milk?? no way! I use half and half along with heavy cream and get the most delicious ice cream you can imagine! and in only 25 minutes. Also turn your freezer down. If your freezer is empty it may not even go to zero degrees! I clean and rinse the tub quickly and return it to the freezer quickly. Its still mostly frozen when I put it back in and only takes 2-3 hours to refreeze completely! I bought a second tub but never need to use it! This thing has worked perfectly for me and everyone loves my ice cream! The secret is in the better ingredients. more costly yes...but sooo worth it! My recipe: 3cups of half and half. 2cups of heavy cream. 1&1/2 cups of C&H sugar dissolved in the cream. 2 table spoons of imitation vanilla. 1 tiny pinch of salt. Try you will love it! Answer: | I bought the Tovolo Ice cream tubs and they are very sturdy with a removable inner plastic liner for easy cleaning. The large bowl itself that fits inside the machine is not supposed to have ice cream frozen in it because it can damage it. I leave the empty bowl in my freezer until I'm ready to make a batch and then empty the contents into a Tovolo tub. I looked at other tubs but this brand seemed to have the best reviews, was reusable, and decent in price. They fit about 1.5 quarts and I have a little extra in the machine that I either eat or just put in a small Tupperware dish. I know you can go directly on the Cuisinart website if you need any part numbers for a specific model. I did see extra bowls for the machine on their site and on amazon. Just get your model number for your machine and type that in the search box. |

The machines themselves are pretty much the same. I haven't used any of the accessories that came with mine, i.e. the containers to make frozen pops. We use our Yonana machine several times a week. We love it. The fruit treat is just too darn good! You know you have to be cheating on any diet, but it is just fruit! Love it! |

Answer: | The problem is two-fold. First, the instructions and video tell you to put large chunks of banana in, alternately with small pieces of other fruit. But what it should be telling you is to chop the banana into smaller pieces (I like 1/4" to 1/2" lengths) before freezing them, and alternating small pieces of banana with other fruit. Secondly, no all videos tell you to let the mixture sit a few minutes, stirring a little, before serving. That's how you get the soft-serve texture. To get that soft-serve swirl you'll need to put the softened mixture into a pastry bag and feed out with a large tip. So the perfect soft-serve sorbet can be achieved, but they neglect to tell you exactly how. I only found out by searching for how-to videos on YouTube. |

Answer: | I find it best to put the leftovers in 16oz plastic containers or what size you want. It keeps for a few weeks that way. |

Answer: | Put the mixture in the metal container and close it. Be sure the dasher/beater is in it. Hook up the motor. Start machine. Pack in layers with ice, then rock salt (1st layer goes up approx. 1/3 the height of the container), then more ice and more rock salt and continue on until you have layered up to the top. The machine should be running while you are doing this. Keep adding more ice and rock salt as it melts until the churning slows down and stops due to the thickness of the ice cream. The ice cream will be soft and should sit for a few minutes before the dasher is removed from the container. Remove the container from the ice and salt surrounding it. Freeze overnight if possible as the ice cream will harden as it freezes. Adding rennet to your ice cream mixture will insure a more solid texture but this depends on the recipe, and it is optional. Enjoy your machine. Hint: If you are using Vanilla, Mexican Vanilla will add a slightly coconut taste to some recipes....we love it and prefer the Mexican Vanilla. |

Answer: | Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I'd recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn't taste 100% like sugar. I wouldn't substitute more than 60% of the sugar or so. |

With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). I pour straight into the machine hot from the stove and in about an hour and 20 minutes I have soft serve ice cream. It’s the best I’ve ever had. The machine is a dream! It’s SOOOOO. Easy to use AND addictive! My first day I made 3 quarts of frozen custard. I don’t think I’ll ever buy ice cream at the store again. |

Both will keep cooling the ice cream if you don't take it out immediately after it finishes. The 15 doesn't display that it is mixing or that it is only cooling, but alternates the remaining time and the temperature reached. |

Answer: | I just looked at mine and there is a slight bulge just right of center on the front - hadn't noticed it. Doesn't seem dented or anything - maybe just a little bulge to accommodate the cooling compressor. FYI - I have made almost 50 quarts of ice cream with no problems what-so-ever. You only need to put in about 3 cups of mix as the volume expands as it mixes and freezes. It will NOT freeze solid. When it gets stiff and barely turns, you need to shut it off - scrape the dasher and bannister into another container - I use quart size cardboard containers - and put in your freezer to finish the freezing process. |

No salt, no sugar, no milk, no nothin' else. Turn it on for 20 minutes and you're done. Yummy frozen yogurt. Other favorite flavors, always beginning with VANILLA yogurt: 1) coconut and chopped pecans; 2) 1/2 cup of mini chocolate chips |

Answer: | I believe they are a combination of both. Only the very old White Mountain hand crank ones were all metal gears. The plastic ones today, make it easier to crank, due to less friction, but are less sturdy of course. |
Question: | Does the motor stop automatically when done |
Answer: | NO! The motor will slow down, and turn very slowly, so you have to keep your ears tuned to the mixer. Once it slows, and stop from the ice cream being thick, you need to unplug as soon as possible or you could burn up your motor. Nothing to fear, just keep an ear and an eye on it, so when it slows or stops, then unplug immediately. But it does not stop on it's own, like a sensor, or automatic shutoff switch would do. This is still old school technology. |

Answer: | I just received mine 2 months ago and had no manual or recipe book in the packaging. I found this simple recipe for Old Fashioned Vanilla ice cream and my family loves it. It is not the custard type so requires no cooking. 2 cups heavy cream. 2 cups whole milk. 3/4 cup of sugar. 2 teaspoons good vanilla ( I use one vanilla bean). Pinch of salt. Whisk all the ingredients together until smooth. Pour into ice cream canister. Layer ice and rock salt or ice cream salt in the ice cream maker's bucket and turn it on. It takes about 25 minutes until soft serve and then I put it in a freezer container until hardened. It works well for us. Amazon says you can contact the manufacturer for a manual but I just googled recipes for it. Hope his helps! |
