Answer: No you do not need to pack it with ice. The inner bowl goes into the freexer for a set amount of time. I did have an issue with it because the ice cream never produce ice cream, just of a slushy mixture. Perhaps it was me using too much fruit and I use a different cream than what the recipe called for.

Question: Why won't my lid stay on
Answer: Because the plastic dasher/paddle gets warped (at first I thought it was from washing the paddle in the dishwasher, but I'm on my second machine after maybe five years and washing it in hot water after using it seems to have done the same thing so perhaps it's just from use) and so it doesn't revolve "flatly" in the circular groove in the clear plastic cover when it's placed on top. I find that eventually it seems to settle down and revolve evenly without any wobbling, so to speak. Rather than use tape, I've used a small but heavy pan with a base a bit larger than the top of the machine set on top of the clear plastic cover until it's revolving evenly - maybe the first five minutes of use. Other than that, and the need to use a hard - but not too hard: it has to have some flex - plastic utensil to remove the last of the frozen ice cream from the interior bottom and sides of the freezer bowl because it's made of aluminum and scratches incredibly easily, it's a terrific unit.

Answer: Quality ice cream from plain milk?? no way! I use half and half along with heavy cream and get the most delicious ice cream you can imagine! and in only 25 minutes. Also turn your freezer down. If your freezer is empty it may not even go to zero degrees! I clean and rinse the tub quickly and return it to the freezer quickly. Its still mostly frozen when I put it back in and only takes 2-3 hours to refreeze completely! I bought a second tub but never need to use it! This thing has worked perfectly for me and everyone loves my ice cream! The secret is in the better ingredients. more costly yes...but sooo worth it! Answer: I bought the Tovolo Ice cream tubs and they are very sturdy with a removable inner plastic liner for easy cleaning. The large bowl itself that fits inside the machine is not supposed to have ice cream frozen in it because it can damage it. I leave the empty bowl in my freezer until I'm ready to make a batch and then empty the contents into a Tovolo tub. I looked at other tubs but this brand seemed to have the best reviews, was reusable, and decent in price. They fit about 1.5 quarts and I have a little extra in the machine that I either eat or just put in a small Tupperware dish. I know you can go directly on the Cuisinart website if you need any part numbers for a specific model. I did see extra bowls for the machine on their site and on amazon. Just get your model number for your machine and type that in the search box.

Answer: As soon the ice cream is ready I mean after 30 minutes I put in the container and in the freezer, if it is very hot the ice cream will not stay hard.

Answer: From my point of view, it is more work than it's worth. All of my recipes are for 4 or 6 quart machines, so none will work with this unit. Purchased mixes don't taste as good to me as my homemade from scratch ones. No ice, no salt is true, but you have to freeze the insulated mixing bowl for a minimum of 12 hours before using it. 24 hours works better, and then refreeze the contents you don't use right away, in the bowl, so you can dispense them using the machine again. Plus, it's mostly plastic. If you drop it, it breaks and needs to be replaced. My opinion, stay with a 4 or 6 quart electric machine that lasts and produces more ice cream.
Question: Does this machine require purchase of a special mix, or can you make ice cream using a recipe for typical "churned" type product
Answer: No special mix. The recipe in the book (that comes with it) for vanilla ice cream calls for whole milk, sugar, heavy cream, and vanilla.
Question: Should I buy another bowl for a different flavor? My grandsons don't like the same flavor? Can it be emptied and used again right after
Answer: Maybe, but the problem would be the coldness of the bowl. If you quickly scraped out the first flavor and immediately put in the mix for the next flavor it might work as long as the bowl doesn't warm up. You couldn't wash it out as that would warm the bowl. Take turns making their favorite flavors.

Question: Has anyone left the sugar out (or only used a couple of tablespoons)? How does the amount of sugar affect the texture of the finished product
Answer: Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I'd recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn't taste 100% like sugar. I wouldn't substitute more than 60% of the sugar or so.

With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). I pour straight into the machine hot from the stove and in about an hour and 20 minutes I have soft serve ice cream. It’s the best I’ve ever had. The machine is a dream! It’s SOOOOO. Easy to use AND addictive! My first day I made 3 quarts of frozen custard. I don’t think I’ll ever buy ice cream at the store again.

Question: Will this work, if i want to use it to transfer the ice cream i made? to keep the ice cream cold for a longer time during the travel? say 30 minutes
Answer: Yes, I re-freeze this after making sorbet/ice cream and then put the frozen treat in a container that fits inside. I thencover with another cold/freezer pack and put in cooler bag. After 1.5 hours of driving the sorbet was still solid.
Question: Has anyone ever successfully made 2 batches of ice cream without re-freezing the canister between productions
Answer: I have tried it and no, the second batch did NOT freeze up properly. Since I often have two flavors when I entertain, or need more than 1 and 1/2 quarts of ice cream, I bought a second canister. NOW I can make two batches in a row.
Question: Is it possible to buy a lid for this? It would help keep the ice cream fresh and also keep the bowl clean when sitting in the freezer
Answer: The lids for the Pyrex 1.75 qt round glass storage container fit this ice cream container perfectly.
Question: What does the bottom of this look like? I need one that has a 10-sided 'flower' on the bottom where the turning device fits in

    Question: Can you make ice cream using no eggs and in place of cream can you use soy milk, or almond milk
    Answer: I don't use eggs with my ice cream. Unfortunately I have not used soy or almond milk. I have used heavy whipping cream, and I want to try original greek yogurt, or the vanilla. It could be interesting.
    Question: why won't it freeze
    Answer: After owning two different ice cream makers and using them often, I learned a few dos and don'ts. One of them is never rush the freezing of the bowl. It must be frozen for at least 24 hours in your freezer set to 0°f. And it should be set back from the door or lid of the freezer. Try not to open the freezer during this time. Chill but do not freeze the paddle. Chill the mix at least 24 hours-do not freeze. During hot and humid weather, you will not get even soft ice cream if the area you are using is not out of drafts. Cover the hole at the top with a saucer of folded tea towel. The ice cream making process is a little fussy but well worth the results, really impresses the grandkids. Expect a frozen custard like consistency that you can repack and place in the freezer to ripen and firm up.
    Question: Do I have to pre-chill the bowl in my refrigerator's freezer or is everything done in the Cuisinart Ice cream maker
    Answer: Yes, you have to put the bowl in the freezer for 18-24 hours. I store my bowl in the freezer so it's always ready. The double walled bowl is filled with something that freezes and that how the ingredients freeze. The actual ice cream making time is only 25-30 minutes once the ingredients are put in the bowl.
    Question: The mixture froze to the sides of the bowl and the rest remained watery. I did NOT add my ingredients before starting machine. Blade moves with bowl. Is this right
    Answer: Once your mixture is good and ready, get the bowl out of the freezer and install it in place: the round opening should be up, and the cross blade should be at the bottom, with the external knob fitting in the little hole at the bottom of your bowl. Also the clear plastic dome must be locked in place on the motor base. Turn Cuisinart ON BEFORE you pour the mixture into the freezer bowl as instructed in the Cuisinart booklet. (NOTE: ingredients must be added to the freezer bowl after unit is turned on).
