Answer: | NO, NO, NO....I bought one of these 4 days ago at a local retailer. It says made in USA all over the box. Before I bought it, I called the number on the website, and asked the customer support person where it was made. She told me that the parts are made in the USA, but they are assembled in Mexico. I was looking for an AMERICAN MADE, AMERICAN BUILT unit, but I was under a time crunch. Reluctantly, I bought it. I opened the box, and the first thing I saw was a sticker on the motor that said made in china, plain as day. I used this thing one time. It did work, and made ice cream as advertised, but after washing it, drying the parts, and putting it away, I looked at it again 2 days later, and the metal mechanism that the paddles attach to were rusting!! Are you kidding me?? $270.00 for one batch of ice cream! What a bargain. Needless to say I returned it today. Their own company doesn't even know where their products are made!! If it seems like I am upset, I am. Nothing is made in the USA anymore, and quality suffers tremendously. By the way, all the inside metal parts are plated, not stainless steel like they should be. The only thing I saw that was stainless was the actual cylinder. Don't waste your money. If anyone out there knows of a truly American made and American built ice cream maker, please tell us on here. |

Answer: | I have never tried to make a half batch. I have made batches less than a full batch and it worked fine. Breville only wants you to use 3-1/2 cups of liquid so a full batch is only a little over a quart anyway. Most of the recipes in the gelato/ice cream books are just about right for this machine - about 3-1/2 cups of liquid. I suspect most of the machines on the market are about the same. |

Answer: | It will not be firm like what you have out of your freezer. It will be more like soft serve, you need to put it in your freezer for a bit after it is done. But really, that's the way all ice cream is, even what you get in a creamery. I actually returned this unit and bought a Cuisnart instead. I wasn't pleased with the paddle on this unit. It seemed very flimsy and when the ice cream got thicker had a hard time stirring. At one point it even stopped stirring and burned up the bearings. They replaced it for me at no charge but by that point I had already decided to change brands. If you look at it and compare to the Cuisnart you will see what I mean, the paddle just needs a little reinforcement IMO. |

Answer: | I love my Breville. The consistency settings range between sorbet, frozen yogurt, gelato, and ice cream (softer to harder). I think the settings work, but I like to make ice cream, so I now just keep it on the hardest setting. That setting will give you the consistency of something near a soft serve. One of the reasons I chose this one over the Cuisinart ICE100 is that it has the "auto" setting. You cannot always gauge how long it will take when using different bases and styles of ice cream (this one has both options). Additionally, you can set it to make a sound when it is time for mix-ins and when it is ready. Also, it has the "pre-cool" feature (which I love!) that will get the temperature right before adding the mix (I compare it to pre-heating an oven). Finally, the "keep cool" function REALLY comes in handy (if you have used the freezer bowl types, you know that time is of the essence once it is done!) I'm glad I went with this one. P.S. I HIGHLY recommend using Sweet Bliss containers to store your ice cream. They are the best I have found or seen anywhere for storage, and you can write on them w/ a Sharpie. Answer: | Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I'd recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn't taste 100% like sugar. I wouldn't substitute more than 60% of the sugar or so. |

With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). I pour straight into the machine hot from the stove and in about an hour and 20 minutes I have soft serve ice cream. It’s the best I’ve ever had. The machine is a dream! It’s SOOOOO. Easy to use AND addictive! My first day I made 3 quarts of frozen custard. I don’t think I’ll ever buy ice cream at the store again. |

Takes that vanilla ice cream to a higher level. Just delicious. |

I think it is taking slightly longer to freeze than when it was brand-new, but it still freezes nicely. I have always followed the rule of waiting 10 minutes between batches to keep the compressor running good. |

Answer: | I always turn on the chiller for 10-12 minutes before I add the ice cream mix to the bowl. It takes about 25 minutes to get the mix frozen to a very thick consistency. I always make sure the mix is super cold, too. The machine will automatically shut off, if the mix gets too thick. FYI - in my opinion, regardless of the recipe--this machine does not churn slow enough to make true gelato. That said, everything I have made has turned out fabulous in this machine! |

Answer: | I make frozen yogurt with this every week, and my recipe is SO easy: 1 quart VANILLA (not plain) yogurt, 1 pkg thawed frozen cherries (or berries of any type). No salt, no sugar, no milk, no nothin' else. Turn it on for 20 minutes and you're done. Yummy frozen yogurt. Other favorite flavors, always beginning with VANILLA yogurt: 1) coconut and chopped pecans; 2) 1/2 cup of mini chocolate chips |

Answer: | I stopped using eggs because for some reason, the ice cream would freeze too hard. I now use: 1 cup cream, 2 cup half-and-half, 3/4 cup sugar, 1 teaspoon vanilla, 1 teaspoon vodka (helps the freezing), pinch of salt, pinch of cinnamon. It's great. |

For best results, store the freeze bowl in the back of your freezer where the temperature is coldest for at least 15 hours. Adjusting your freezer to its coldest setting will help the freeze bowl make firmer ice cream faster.

Most ice cream recipes call for a combination of cream, milk, eggs, and sugar. The type of cream you choose will determine how rich in flavor and how creamy the texture of the finished result. Answer: | From my point of view, it is more work than it's worth. All of my recipes are for 4 or 6 quart machines, so none will work with this unit. Purchased mixes don't taste as good to me as my homemade from scratch ones. No ice, no salt is true, but you have to freeze the insulated mixing bowl for a minimum of 12 hours before using it. 24 hours works better, and then refreeze the contents you don't use right away, in the bowl, so you can dispense them using the machine again. Plus, it's mostly plastic. If you drop it, it breaks and needs to be replaced. My opinion, stay with a 4 or 6 quart electric machine that lasts and produces more ice cream. |

Answer: | No special mix. The recipe in the book (that comes with it) for vanilla ice cream calls for whole milk, sugar, heavy cream, and vanilla. |

Answer: | Maybe, but the problem would be the coldness of the bowl. If you quickly scraped out the first flavor and immediately put in the mix for the next flavor it might work as long as the bowl doesn't warm up. You couldn't wash it out as that would warm the bowl. Take turns making their favorite flavors. |
