3 best canning pressure canner

A canning pressure canner is a kitchen appliance used for safely preserving various types of foods, including fruits, vegetables, meats, and even soups, by sealing them in airtight containers to prevent spoilage. These canners use high-pressure steam to eliminate harmful microorganisms and enzymes that can lead to spoilage while maintaining the quality and flavor of the food. Here are some key points about canning pressure canners:

  1. Pressure Canning Process: Canning pressure canners work by heating food in jars to temperatures above the boiling point of water (typically around 240-250°F or 116-121°C) using steam under pressure. This high temperature and pressure combination effectively kills bacteria, yeasts, molds, and other microorganisms.

  2. Two Types of Pressure Canners: There are two main types of pressure canners: stovetop pressure canners and electric pressure canners. Stovetop models are heated on a conventional stove, while electric models have built-in heating elements. Electric pressure canners are known for their convenience and ease of use.

  3. Jars and Sealing: The food is placed in specially designed canning jars, which are sealed with metal lids and screw-on rings. As the food inside the jars heats up and expands, it forces air out of the jar, creating a vacuum seal when the jar cools down. This sealed environment prevents the growth of microorganisms and keeps the food preserved for an extended period.

  4. Safety Features: Canning pressure canners come equipped with safety features to prevent accidents. These features often include pressure relief valves, locking mechanisms, and gauges to monitor pressure levels.

  5. Versatility: Pressure canners can be used for a wide variety of foods, from pickles and jams to meats and stews. They are especially useful for preserving low-acid foods like vegetables and meats, which are prone to botulism if not properly canned.

  6. Canning Guidelines: It's crucial to follow specific canning guidelines and recipes to ensure safe and effective preservation. These guidelines are often provided by trusted sources like the USDA or the National Center for Home Food Preservation.

  7. Storage: Once canned, the jars should be stored in a cool, dark, and dry place. Properly canned foods can last for years if stored correctly.

  8. Maintenance: Regular maintenance of your canning pressure canner is essential to ensure its continued safety and effectiveness. This includes inspecting seals, pressure gauges, and valves, and replacing any worn or damaged parts.

  9. Economical: Home canning can be cost-effective, as it allows you to take advantage of seasonal produce or bulk purchases and reduce food waste.

In summary, a canning pressure canner is a valuable kitchen appliance for preserving various foods safely. Whether you choose a stovetop or electric model, following proper canning procedures and safety guidelines is essential to ensure the longevity and quality of your preserved foods.

Presto 01781 23-Quart Pressure Canner and Cooker

Presto

Product description

Pressure canning is the only method recommended safe by the U.S. Department of Agriculture for low-acid foods. Doubles as a boiling water canner for preserving fruits, jams, jellies, pickles and salsa in pint and half pint jars. Also handy as a large capacity pressure cooker. Constructed of warp-resistant, heavy-gauge aluminum for fast, even heating. Works on regular and smooth-top ranges. Deluxe pressure dial gauge registers the complete range of processing pressures. This precise measurement is especially important at higher altitudes. Air vent/cover lock allows pressure to build up only when the cover is closed properly and prevents the cover from opening until pressure is safely reduced. 23-Quart liquid capacity (21.8 liters).

The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 23-quart pressure canner is more than adequate for any home canning needs. It's a professional-quality tool, made of heavy-duty aluminum, with stay-cool handles and a strong-lock steel lid. An accompanying rack fits down into the pot to keep jars up off the bottom, so that liquid can circulate underneath. And it can do double duty as a large pressure cooker. It's easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor.

The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The pressure dial gauge gives an accurate reading so that pressure can be kept constant during canning. This pressure canner is also a cooker that's useful for weeknight dinners or for any meal that needs to come together quickly. An accompanying booklet contains more than 50 recipes, ranging from basic soup stocks to stews and pot roasts--even sweets like English Plum Pudding or Brown Bread! Tenderize lean cuts of beef or pork, or cook chicken, fish, or vegetables faster than you can in a microwave, and without losing moisture.

Nonabrasive cleansers are best for cleaning this aluminum pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. The lid of the Presto 23-quart pressure canner is not immersible. In addition, the sealing ring should be removed after each use to allow cleaning of the inside rim of the lid. The dial gauge is delicate; detailed care instructions are found in the accompanying booklet. The vent pipe is simple to keep clean with a small brush or pipe cleaner, and both the air vent/cover lock and the overpressure plug are removable. The pressure cooker measures 14 inches in diameter (17 inches including handles) and 15-1/2 inches tall (including lid). Presto guarantees this pressure cooker with an extended 12-year warranty. A detailed instruction and recipe booklet is included; special safety issues that pertain to pressure cookers are clearly explained. --Garland Withers

User questions & answers

Question: how pressure is regulated
Answer: I am not 100% sure, but I think they are made in Wisconsin, USA. Hope this helps. Suz
Question: Can this canner be safely used on a glass-surface range? If so, what is the smallest burner on which it can be safely used
Answer: There was a time when canning using pressure cookers was deemed a safe method of preserving. However, since 2006 Presto has not provided information for canning in pressure cookers. The information used to support canning in pressure cookers was based on research done in the late 1970's. The current recommendation from the United States Department of Agriculture indicates that to pressure can you will need to use a vessel that is specially a pressure canner, which holds at minimum four quart-size jars. Note that pressure canners are generally 12-quart size or larger. Question: How many Quart and pint jars does it hold
Answer: All of our current stainless steel pressure cookers are compatible with an induction top range. If you have any questions do not hesitate to contact our Customer Service Department via phone at 1-800-877-0441 or e-mail us at [email protected]. We are open M-F 8-4:15 CT.
Question: How many qt jars can be canned in this pressusre canner
Answer: Respectfully, any time I've ever had problems over the decades with beans not cooking evenly it was invariably due to a batch of mixed old AND new beans. This happens more than you might think, and unfortunately a recent purchase of mine of small red beans in 25 lb. bulk are proving to be exactly that. Soaking an extra couple of hours seems to help a little (10 hours instead of 8) and then bringing to full heat and pressure a little more slowly, then pressure cooking one extra minute than you normally would. All those things together will help when old and new beans have been mixed together.

User questions & answers

Question: WILL THIS COOKER/CANNER HOLD 1/2 GAL JARS? HOW MANY
Answer: Contact Ball directly. My best advise.
Question: does it come with a wire rack
Answer: This canner can be used for fruits, tomatoes (not low-acid), jams, jellies, pickes and other preservative. Absolutely no vegetables like carrots or beans, meats, poultry and seafood. Anything you can with a boiling bath canner can be used with this canner. It holds 7 quart jars. If you would can carrots or beans, they are low-acid vegetables, they most likely be hazardous to your health because the canner does not get "hot" enough to control bacteria from growing in the jars.
Question: is it safe on electric stove
Answer: No. It is for water bath canning only.
Question: for those who have a glass top, and you own the 15qt & up pressure canner, does it work ok with the eye being smaller than the bottom
Answer: It's a water bath canner not a pressure canner....only items you can water bath

User questions & answers

Question: I'm looking for a large electric pressure cooker without tons of other features. i don't can, tho. should i still consider it? thanks
Answer: To me the whole point of this canner is it does have lots of features (electronics are cheap). This single unit has replaced my crock pot, a smaller electric pressure cooker (That was not certified to can), and gives me a way to can smaller batches (Like the leftover chili I made with this device). The extra features are easy to use, so I don't see the downside. Plus it is way easier to use than hauling out my large stove top pressure canner. So yes, I would still consider it. This purchase was well worth it and will quickly pay for itself in better food and money saved.
Question: Can I can Apple pie filling using this canner
Answer: Yes I have successfully done so using the Amish Canning Cookbook recipe on page 136 but you have to use wide-mouth quart jars which should be nbd given the amount / consistency of the filling.
Question: Can you can meats
Answer: Yes you CAN ....this is a pressure CANNER and I’ve used it extensively for canning chilli and meat sauces etc. it’s the perfect canner except for the size. It only holds four quart jars max
Question: Does anyone know what Error Code 10 means? Can't find it in manual or online
Answer: This is not an error code. When the Carey shows E10 it is starting the venting process necessary to pressure can. The instructions, including the revised ones, are not clear on this. When you are pressure canning, the pressure limiting valve should be on "exhaust". After a bit, the Carey will beep and show E10, do nothing...you should allow the Carey to vent until the countdown reaches E0 and then switch the pressure valve to "airtight". The timer will begin shortly after you switch to "airtight".
