In order to suspend these items within the container, products like PAM use an emulsifying agent like lecithin. The lecithin is what reacts with the nonstick surface and it does ruin it after a time. Its cheap as heck. Quality is light not too heavey but does not dent. Answer:	It’s metal. I’ve had this one for over a year and it’s still going strong. And I use it a lot.

Answer:	I am not familiar with cocoa nibs. All I know is they are a crushed pod so must be pretty small. And that is what you need as this grinder is for tiny seeds only. And mine does not grind, it is more of a crushing, smearing action. It works well on oily seeds and dry seeds. Hope that helps.
