The reason we use the negative measurements is this: if I am making a recipe, and I need to add 20 grams of honey, rather than messing up a measuring cup, you put the open honey jar (you don't want to include cap weight) on the scale and tare or "zero" it. Then, pick up the honey, put in about what you think is about 65% of your desired weight. Then put the honey jar back on the scale. The amount it shows in a negative number is the number of units (for me, usually grams) that you added to your recipe. Repeat pouring in until the scale registers as a negative number what you were looking to add (in this example, at the end it would say -20g).
