Method:1. get liquid up to temp2. add food3. bring back up to temp4. pour in cooler and capnotes: I have never mashed longer than 2 hours. Final mash temp is usually near 160F. Remember, sous vide is not designed for large items, it can leave foods in the danger zone 40F-140F for way too long. |

The process which is called alkaline hydrolysis dissolves all the body tissue except the bones, separating the liquid from the solid remains.
