Answer: You never had chips on your cheap knives because they are softer metal, probably no higher than RC 58, while this is likely closer to RC 60-62 and will hold a much better edge dramatically longer. That said in the west we call this a cleaver because it looks like a traditional butcher cleaver, but is actually a cai dao which roughly means vegetable slicer in Mandarin Chinese. Use it for slicing all your veggies and boneless meats and you're unlikely to chip it.
Question: How long is the blade? Although it's labeled as 7", some other web sites list it as 7.75". Which is it

Answer: You can definitely cut meat with it but I haven't cut through bone. What I liked about it is the size, fits well in a female hand which most knives don't do.

Answer: This is a Japan made stamped knife made of a stain resistant Molybdenum alloy, hardened to Rockwell 58°-59°. It is a V beveled edge great for both right and left handed people.

Answer: Mostly all carbon steel Japanese knives will oxidize after cutting in any acidic vegetable . There are a couple things you can do . One, you can purchase a knife eraser to clean the corrosion. Or two, get a patina going on your knife by adding Dijon mustard and run onto the blade and let it sit for 5-10 minutes. Delicate knives like yours are high maintenance and need a lot of care. You want to rinse with damp towel every time you're cutting to lemons , tomatoes and such.

Answer: Not really. It can stand up without the metal stand -- the top and bottom, where the knives are inserted are flat but the sides are curved.

Answer: A: I don't have them yet but I don't run any knives in the dishwasher. These, being high carbon I definitely wouldn't, they are usually much more prone to rusting. I have high carbon camping knives and usually rub a little cooking oil on them after cleaning every few uses or after cutting anything acidic like tomatoes or citrus. Might not be necessary with these with whatever coating they mention but I'd err with caution. Generally high carbon steel is easy to sharpen. I don't know about these particularly but if advertised correctly that is what I expect. It's a great price if the reviews are to be believed, three of them seemed a little suspicious but I'm pretty skeptical with reviews sometimes.
