Answer: The Zwilling JA Henckels flexible fish knife is better for filleting fish because it has more "give" in its flex than the boning knife. Choose the knife you will use most. We have both. I use the boning knife for poultry and my partner, the fisherman, uses the filet knife.
Question: What's a guard that works with this knife? Found one on amazon that is for a 5in zwilling & wonder if it works the 5.5 zwilling boning
Answer: A 5” sheath will not fully cover the blade. Unfortunately, we do not currently make a guard or sheath for this knife.

Answer: The box is made of plastic, with a see through cover. It's made to reflect the quality of the knife. By the way this knife is top notch.

Answer: Wish l could show you a picture. It bends at around a 15 degree angle. Its well made, has a good grip, very comfortable. I use it to filet the fish etc... I'm very happy with this purchase.

Answer: I would sharpen a Zwilling/Henckels Pro knife either with a sharpening stone or at a professional knife sharpener. The pull-thru sharpeners will sharpen the knife; however, they take off a lot of metal in the process which will shorten the life of the knife.

Answer: The whole knife is 12 inches. 7 inch blade, 5 inch handle. Don't know why it is listed as 16 inches, unless this is a different knife from mine.

Answer: The knife is reasonably flexible. Maybe a little less than a 1/2" at the blade tip

Answer: No sheath, but I had plenty of my own. I buy the kind that are hard plastic (opaque white). They come in three different sizes and the knife is held inside the sheath securely snapped in. Found the sheaths on Amazon.
