14 best boning knives
Boning knives are a specialized type of kitchen knife designed primarily for removing bones from meat, poultry, and fish. These knives are an essential tool for butchers, chefs, and home cooks who frequently prepare and work with meat. Here are some key characteristics and information about boning knives:
Blade Design: Boning knives typically have a narrow, curved blade with a pointed tip. The blade's shape allows for precise and controlled cutting, making it easier to follow the contours of bones and joints.
Blade Flexibility: Boning knives come in two main categories based on blade flexibility: stiff and flexible. Stiff boning knives have a rigid blade and are suitable for tasks that require more force, such as beef or pork. Flexible boning knives have a more pliable blade, making them ideal for delicate tasks like filleting fish or removing chicken skin.
Blade Length: Boning knives come in various blade lengths, typically ranging from 5 to 7 inches. The choice of blade length depends on personal preference and the specific tasks you need to perform.
Handle Design: The handle of a boning knife should provide a comfortable and secure grip. Handles can be made from various materials like wood, plastic, or stainless steel. Choose one that feels comfortable in your hand and allows for precise control.
Types of Boning Knives:
- Straight Boning Knife: This knife has a straight blade and is suitable for boning tasks that require a straight cut, like removing bones from chicken breasts.
- Curved Boning Knife: A curved boning knife is ideal for tasks that require maneuvering around curved bones or joints, such as trimming beef roasts.
- Flexible Fillet Knife: While technically a different type of knife, a flexible fillet knife is often used for boning fish due to its thin, flexible blade that can navigate around bones and skin with ease.
Maintenance: Like all kitchen knives, boning knives require proper care and maintenance. Hand wash and dry them promptly after use to prevent corrosion. Regular sharpening is essential to maintain their cutting performance.
Safety: Be cautious when using boning knives, as they are extremely sharp and can cause accidents if mishandled.Always cut away from yourself and use a stable cutting surface.
Versatility: While boning knives are primarily designed for meat and fish preparation, some cooks also use them for other tasks like trimming vegetables or fruit.
When choosing a boning knife, consider the type of meat or fish you most frequently work with and your preferred level of flexibility in the blade. Quality and sharpness are essential for efficient and safe boning, so invest in a high-quality boning knife from a reputable manufacturer to ensure a long-lasting and effective kitchen tool.

CARE AND USE
Be good to your knives and they’ll be good to you. Following these simple guidelines will ensure that you get the longest life out of your knife!
CLEANING
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.
SHARPENING
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best.
FORMERLY FORSCHNER
In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.
- VERSATILE DE-BONING TOOL. Trim or remove meat from the bone with ease. This knife's pointed tip easily pierces meat while the curved-edge allows for smooth, clean cuts close to and around the bone.
- IDEAL FOR DELICATE CUTS. Delicate poultry and fish can be difficult to debone with accuracy. The curved yet flexible blade allows for a better working angle when cutting fish or thin cuts of meat that are more intricate to bone and easily pierced.
- EASY HANDLING. This knife features an ergonomic Fibrox Pro handle for a non-slip grip -- even when wet. This exceptional knife is weighted and balanced for easy handling and comfort.
- KNIFE DIMENSIONS. Stainless steel blade -- 6" in length. Meets the strict National Sanitation Foundation (NSF) standards for public health protection.

User questions & answers
Question: | Where is it made |
Answer: | I've got both -- the straight one. |
Question: | Is it made in China |
Answer: | These are the exact same knives. The 47513 is the newer model. The only difference is on the 40513 it has two sets of numbers 40513 and below that 5.6413.15 and on model 47513 it has just the numbers 5.6413.15 |
Question: | How is this different from the Genesis series blade |
Answer: | A flex knife might be good for trimming bone and fat. This semi-stiff knife has proven to be good for slicing and carving as well as trimming and boning for me. So, it fits both of my needs. I have been very pleased with this knife since I bought it. I use it almost daily and have not had to scrapen the blade yet. |
Question: | Can the mercer culinary ultimate white 11-inch slicer, wavy edge be sharpened |
Answer: | You need this knife if you eat/cook meat. You can buy a whole beef tenderloin (filet) for $6-$8/lb on sale at a big box store on sale and trim it yourself. That'll save you up to $100. You definitely need three knives in a Western kitchen: a French chef's knife; a flexible boning knife, and a bread knife, which you use for splitting cake layers, too. (Make sure the latter is 10" or even 12" long for that.) You can add a small paring knife and/or 6" utility knife down the road if you like. Never buy a knife set, by the way. Knives within any one brand aren't always the best of their kind. Moreover, you'll get knives you don't need and it'll be missing knives you do need. |

User questions & answers
Question: | Is there a special way to sharp the knife or do you sharpen it like any other knife |
Answer: | Flexible fillet knife |
Question: | Where is the knife made |
Answer: | If it did have teeth you would need to brush and floss them. Boning knives are typically not serrated. The concept behind a boning knife is to clean a bone well serrations would leave excess on the bone. I hope this helps. |
Question: | Is the handle and rest of the knife once piece or they weld together |
Answer: | ABSOLUTELY! Be careful! Personally, I'd kill the chicken first. |
Question: | is there a rockwell hardness |
Answer: | Negative, all of our Millennia collection are made in Taiwan. We stand 100% behind our quality and guarantee all of our products for life. |

User questions & answers
Question: | How many units comes? 1 knive or 6 knives |
Answer: | I was all prepared to tell you how much I loved these knives and I do love them. This is my go-to knife for bread, cheese, and tomatoes. However, I have no idea where they are made. Sorry. |
Question: | Is it dishwasher safe |
Answer: | Made in TAIWAN. |
Question: | Where is the knife made |
Answer: | These are bare bones blades meant to get beat up doing rugged tasks like boning and quartering animal carcasses. When you need a knife that you can rely on working on a line this is the type you want to grab. When you're looking for fine cuts and sophistication you'll want a higher quality blade like the genesis. If you notice, the taper on these commercial blades is a bit sharper; they do this to save money because they don't have to feather all the way back to the spine. It makes the blade look cheap but that's part of what ultimately makes these knives invaluable in commercial kitchens. |
Question: | Is this knife good for removing silverskin |
Answer: | Of course! but not with traditional whetstones. All knives can be sharpened, you just have to have the correct tools in order to do it. Just look for a serrated edge sharpener, I'm sure they sell them on amazon. |

Care and handling of Genesis cutlery.
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

User questions & answers
Question: | Does it come with the sheath |
Answer: | If you're cutting through food where you're hitting the cutting board pretty hard, you'll need to hone the blade more often, but if your cutting soft vegetables and use the speed of your motion and not how hard you push down do the work of cutting, then you probably have to hone it once a month with regular use. Cutting through harder vegys means you're going to hit the cutting board harder though, so if you do that all the time, then you'll be honing about once a week or two weeks depending on usage. Sharpening is a different subject, and if you're not constantly banging the blade down on the cutting board, or cutting around bone which will put microscopic imperfections in the cutting edge, then somewhere between 6 months and a year with continual usage. You'll know because honing won't give you a sharp edge anymore. I LOVE this knife and use it a few times a week so I hone it about once a week, but I have a guide on my steel for 14 degrees and I have a hand sharpener that does 14 degrees each side so both honing and sharpening are VERY easy with this blade, and I've only changed the edge angle 1 degree (these come at 15) |
Question: | What angle is the bevel |
Answer: | It weighs 8.3 oz and the spine goes from 2.75mm near the bolster, to 2.352mm at the center and 2.19mm at the tip. |
Question: | Donde fabrican este producto |
Answer: | The widest part of the blade is 1 3/4 in, the center is 1 5/8 inch and the last inch of the blade narrows down from 1 inch. So this is a pretty wide blade, but very light and very sharp. |
Question: | What bevel angle should the knife be sharpened to? 15 degrees |
Answer: | I've asked this question and the answer I got from a seller, and I believe you can also get the info from Mercer, is 15 degrees. There is a Wusthof sharpener that sharpens to 20 or 14 degrees. They're newer Classic lineup has blades set at 14 degrees. People saying larger angles are probably giving info for older knives, just like your question assumed two typical angles, 22.5 or 15, when in fact many European style knives have for a long time been set at 20 degrees and the finer blades are set at 11, 14 or 15 degrees. 11 degrees is for really tough metal, so different Japanese expensive blades are set that fine. Since I have the Wusthof pull through sharpener, I've set these to 14, and though I may have to hone and sharpen more often, they cut REALLY easy, and I LOVE this knife set that way. 22.5 is typically the angle for a heavy meat cleaver nowadays, or maybe knives that you buy for heavier outdoor cutting. |
