Answer: National Food Service. Meaning is it fit for restaurant use. Based on the quality of the one I received I will say yes. I am retired from the food service industry now. But if I was not, I would not be afraid to use this in my restaurant.

Answer: Yes, there is a slight flex to it. IhVe had mine for about 6 months and was perfectly happy with it. It does not hold an edge as long as a more expensive one might, but I just run it through my sharpened about 10 times and it is good as new. I bKe a lot of crusty artisan bred nd they need a nice sharp knife,so I sharpen it each time I bake.
