12 best carbon steel woks
Carbon steel woks are popular kitchen tools used for stir-frying, sautéing, deep-frying, and other high-heat cooking techniques in Asian cuisine and beyond. Here are some key points about carbon steel woks:
Material: Carbon steel woks are made from carbon steel, which is an alloy of iron and carbon. It is known for its excellent heat retention and distribution properties.
Seasoning: Most carbon steel woks require seasoning before use. Seasoning involves coating the wok with a layer of oil and heating it to create a non-stick surface. Over time, with proper care, the wok develops a natural patina that enhances its non-stick properties.
Shape: Traditional carbon steel woks have a round bottom and sloped sides. This design allows for easy tossing and flipping of ingredients during stir-frying. However, flat-bottomed woks are also available and are suitable for use on flat stovetops.
Versatility: Carbon steel woks are versatile and can be used for a wide range of cooking methods, including stir-frying, deep-frying, steaming, searing, and more. They are often used in Asian cooking but are also popular in Western kitchens for various dishes.
Heat Control: Carbon steel woks respond quickly to changes in heat, making them ideal for stir-frying.You can create a hot zone in the center for searing and a cooler zone on the sides for simmering or keeping ingredients warm.
Care and Maintenance: To maintain the seasoning and prevent rust, it's important to properly care for your carbon steel wok. This includes avoiding soap, thorough drying after each use, and occasionally re-seasoning as needed.
Handles: Carbon steel woks typically have two loop handles on either side and a long wooden or heat-resistant handle opposite the main handles. The wooden handle stays cool during cooking, allowing for easy handling.
Size: Carbon steel woks come in various sizes, typically measured in inches (e.g., 12-inch, 14-inch). The size you choose should depend on your cooking needs and the size of your stovetop.
Maintenance: To prevent rust and maintain the seasoning, it's important to clean and dry your carbon steel wok thoroughly after each use. Lightly oiling the surface before storing it can help protect it between uses.
In summary, carbon steel woks are versatile and popular cookware items used for a variety of high-heat cooking techniques. With proper care and seasoning, they can become reliable kitchen staples for stir-frying and more.

Helen’s Asian Kitchen Carbon Steel Wok is the perfect addition to cookware for stir frying, stewing, sauteing, steaming, braising, frying, and deep frying favorite Asian recipes and so much more. Crafted from a sturdy 1.6-millimeter carbon steel, it distributes heat quickly so foods cook evenly. The cooking surface collects a natural patina over time to create that coveted non-stick cooking performance. The bamboo handle and helper handles are heat-resistant for comfortable use. Its sturdy riveted and flat-bottom design sits securely on any stovetop and works equally well with gas, electric, and induction. The high-domed lid retains heat during the cooking process and prevents splatters. The wok hangs for easy storage. Carbon steel is easily seasoned, reseasoned, and maintained to help prevent rust. Successive seasoning and regular use will gradually build a black patina, providing a smooth, stick-resistant surface, much like a well-seasoned cast iron skillet. The more use the pan gets, the darker and more stick-resistant it becomes. It is completely normal for an unseasoned wok to develop rust. Rust will not harm or alter the performance of the wok in any way. Simply scour away the rusted areas and season as instructed. Before first-time use, clean thoroughly, then season to seal the surface and prevent rusting. Set includes a 13-inch bamboo spatula, recipe booklet, full use and care instructions along, and a lifetime warranty against manufacturer's defects in workmanship. Brought to you by HIC Harold Import Co.
Fashioned with a handsome profile and a rugged build, this Asian Kitchen carbon steel lidded wok provides a smart-performing traditional tool for high-heat cooking. Created by Helen Chen, daughter of Chinese cooking pioneer Joyce Chen, the 14-inch piece is crafted from heavy-gauge 1.6 mm carbon steel for speedy conduction. As opposed to nonstick pans, this material does require seasoning but with a little initial help from the cook provides an optimum surface for searing and stir-frying.
Flat-bottomed for stability, this wok features deeply sloped sides and dual heat-resistant handles made of wood. A high-domed lid allows for steaming and accommodates bamboo steam baskets comfortably. The set also includes a 13-inch bamboo spatula and recipe booklet. For best results, both wok and lid should always be washed by hand. --Emily Bedard

User questions & answers
Question: | Acids (tomato, vinegar, lemon) should be avoided when using carbon steel. but cooking w wok is quick. Can I cook w/ acids w this |
Answer: | With well seasoned wok I have no trouble with tomatoes. I always care to wipe it clean and oil it while it is still warm. I really like this wok! |
Question: | Can the wood handle be removed/unscrewed so that I can season it in an oven |
Answer: | Dont remove handle screws. I think handle is a potential design flaw. Two small wood screws holding all that weight in a hot environment. My handle started to loosen day 1. Wood screws in wood cant be perpetually retightened. Eventually the soft wood holes arent going to be able to hols screws tight. Seeminly huge design flaw in an otherwise well-crafted wok. So I wouldnt intentionally remove/loosen the screws any more than I had to. |
Question: | After seasoning the wok the wooden handle became loose. The screws only spin in place and don't actually tighten any more. Any suggestions |
Answer: | Sometime it happens because of low air humidity (comparing to where it was made). Firstly, try to put wet towel onto wooden part of handle for a night. If not helps then the option is to unscrew it, put for example small pieces of paper to holes to tighten the connection. Then screw it again. Usually it works. |
Question: | Has anyone found a kid for this |
Answer: | All the kids I've tried so far, don't have big enough hands for this wok. And they keep complaining about "the burns" and "I want my daddy...blah blah blah...' |

Answer: | Got it a while ago, but if memory serves me right, the box was about 1ft-1.5ft square around by 5ft tall. |

Product features
You must wash off protective oils and get to the bare steel.
Scrub, Rinse, and Repeat with a scouring pad and detergent.
Take a clean paper towel and rub the surface dry.
If there is any residue, keep scrubbing. You need naked steel with no oil on it.
Put the wok on high heat. This requires a very hot gas flame. We suggest a 12,000 to 15,000 BTU burner.
The steel will yellow-orange then start to blue. If you have properly cleaned the wok, there will be very little to no smoke.
Move the wok slowly over the flame.
When you are done, the ENTIRE surface of the wok should be a beautiful blue steel.
Let the wok cool. If you put oil on that 550F steel you will have a kitchen of smoke! When it cools, put it back on medium flame.
Now oil it over the entire surface. You can use a paper towel and tongs, or any heat-proof brush like a basting brush.
This part may cause some smoke. If lots of smoke, reduce heat.
Your blued wok loves oil, when coated with oil, it becomes both non-stick and non-reactive to rusting.
How to Maintain?
Never use abrasives (like a steel scrub). Never use a detergent. To clean, use hot water and a kitchen dish brush. After washing, dry well and wipe a few drops of cooking oil over the inside and out. Take care of your wok, and it will take care of you!
If the worse happens, in the beginning you forget to oil, and it shows rusting. Have no fear. This is 4 3/4 lbs of steel. You can't damage it. In this exception, use an abrasive to remove the rust. Reseason the area. And keep on cooking! Again, take care of your wok, and it will take care of you!

User questions & answers
Question: | First use: I heard a "boing" and a straightedge showed ~1 mm bowing of bottom. Will that affect use on ceramic top or induction stoves |
Answer: | Yes it will rust if you do not dry it with heat, every time you use it wash with cold water and put it in the stove to dry. I use high heat and coconut oil. Then I use a paper towel to wipe excess oil out and put it away. This will take about 4 times depending on what you cook. I also used wooded tools in the beginning. Now I can use it like my cast iron cook ware. I hope this help you. |
Question: | What's the practical advantage of this 2mm thick wok instead of Joyce Chen's other 1.5mm wok |
Answer: | Hi Jeta, Our woks are shipped from United States or Australia. Hope that answer your question. Warm regards Wendy The Mammafong Family |
Question: | Does seasoning have to be done before every use as mentioned in the instructions |
Answer: | No mine is still firmly attached 5 months in... |
Question: | What temperature can the handles withstand? Could it be put in the oven? If not, are the handles detachable |
Answer: | Hello there, our Mammafong flat bottom wok is made of 16 gauge carbon steel which means the thickness is vary from 1.3mm-1.5mm. I know this may sounds confusing. As our wok is handcrafted and specially designed to have a thick base and thin wall, you may find the base is thicker (1.5mm) than the edge of wok (1.3mm). This help to make the wok lighter as well as improve heat distribution. I hope that's answer your question. Daphne - The Mammafong Family |

User questions & answers
Question: | Is the cooking surface nonstick or plain carbon steel |
Answer: | I didn’t see a Prop 65 warning. |
Question: | use on electric stove |
Answer: | Yes actually it took about 45 minutes. Don’t rush it. It’s worth the time |
Question: | What is the flat bottom diameter(what comes in contact with stove top |
Answer: | No, this wok does not appear to be made for that. |
Question: | I have an induction cooktop. Can someone please tell me if a magnet will stick to the bottom of the wok |
Answer: | KT, this could be two reason. The wok comes with an oil coating from the factory and it could be the oil that they used caused chemical reaction and emit toxic element. Secondly, it could be your seasoning flaked off from the wok. This could happens when they used poor quality carbon steel. My mom had a similar wok with different brand previously and this never happened before. I suggest you to contact the seller directly. |

Product description
Helen’s Asian Kitchen Carbon Steel Wok is the perfect addition to cookware for stir frying, stewing, sauteing, steaming, braising, frying, and deep frying favorite Asian recipes and so much more. Crafted from a sturdy 1. 6-millimeter carbon steel, it distributes heat quickly so foods cook evenly. The cooking surface collects a natural patina over time to create that coveted non-stick cooking performance. The 2-tone bamboo handle is heat-resistant for comfortable use. Its sturdy riveted and flat-bottom design sits securely on any stovetop and works equally well with gas, electric, and induction. It also hangs for easy storage. Full use and care instructions are included along with a lifetime against manufacturer's defects in workmanship. Brought to you by HIC Harold Import Co.

User questions & answers
Question: | will this be too shallow to do stir fry? only 3.5 inch in height |
Answer: | Neither ceramic cooktop nor induction use physical contact to heat. |
Question: | has anyone felt like this wok is too small |
Answer: | More metal will retain heat longer moving the pan around. But, it also heats slower. Unless you have a High BTU gas burner that will burn the coating off, (a gas range will not) either pan will need sanded on the inside to remove the coating, provided the 1.5 has the same coating as the 2mm. You will loose some of the metal as it has ribs on the inside and is not smooth, thus removing the ribs to get the coating off in between. Unless you have a high BTU burner, be prepared for needless work to get the coating off. It will not wash off, nor will acetone remove the coating. And you don't want to cook with the coating on, slowly eating it. If you try to wash the coating off and think you did. The inside of that wok should look like shiney bare metal, like a new knife does. You can find other woks that are coated with just machine oil that can be washed off. Some are preseasoned with cooking oil to keep them from rusting untill they are purchased. I like the pan, but I would not buy another because of the coating. |
Question: | How wide is the flat surface for the12 inch one |
Answer: | The best fat to use for seasoning carbon steel and cast iron is to use a Crisbee Puck. Better than any free-flow oil and does an incredible job. Check out their website: crisbee.org and see their products here on Amazon. Fantastic product I use for all my woks and cast iron cookware! https://www.amazon.com/s?k=crisbee&crid=C9STVY8U60B6&sprefix=crisbee%2Caps%2C138&ref=nb_sb_ss_i_2_7 |
Question: | What is the base diameter of the pan |
Answer: | The round-bottom version of the 14" wok has wooden handles that are not removable. HOWEVER...the flat bottom 14" wok has plastic handles that ARE removable. These are two completely separate models. If you want removable handles you MUST order the flat bottom wok. |

Heavy Gauge Carbon Steel
Made of heavy gauge carbon steel yet lightweight for easy lifting while cooking. Concentric grooves provide rapid, constant heating and quick heat recovery for optimum cooking. Extremely durable and should last a lifetime if cared for properly. A traditional wok material which renders superior cooking performance!
Naturally Seasoned
Carbon steel must be seasoned to ensure optimum surface for searing and frying, and to prevent against rust. Once seasoned, the naturally non-stick surface requires proper care. To clean, don't use soap, rather soak the wok in hot water for 5 minutes to loosen stuck-on food. Then use hot water and a soft sponge on the inside to protect the interior patina. To clean the exterior, hot water and a scrubber sponge is adequate. Dry over low heat prior to storing.
