Cooking with cast iron

Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.

Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.

Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation.

Heat recommendations

Le Creuset cast iron cookware can be used on all heat sources including gas, electric solid plate or radiant ring, vitro-ceramic glass, induction, and ovens fired by gas, oil, coal or wood. When using any glass-topped stove, always lift the pan when moving it; never slide it, as this may damage the stovetop or the base of the pan.

Always match the pan’s base size to the stovetop heat zone to maximize efficiency, and to prevent overheating of the pan sides or damage to the handles.

Gas flames must always be confined to the base area, and must never extend around the sidewalls of the pan. Long handles should be positioned safely where they do not hang over the front of the stove or other heat zones.

Cooking tips for grilling

Grills may be preheated to reach a hot surface temperature for searing and caramelization. This advice does not apply to any other products.

For correct grilling and searing, it is important that the cooking surface is sufficiently hot before cooking begins. Sear lines from ribbed grills will not be produced if the pan surface is too cool, or if the food is too wet. Place the empty pan on medium heat and allow it to heat for several minutes. Do not add oil to the cold pan—the oil may become too hot and smoke.

Take a few drops of water on your fingers and scatter over the hot surface. If they sizzle and evaporate almost immediately it is hot and ready for use. If the water produces steam and has no sizzle, heat the pan a little longer and repeat the water test again. When the surface is hot enough, lightly oil it with cooking spray or brush it with oil using a Le Creuset silicone basting brush. Vegetable, ground nut or corn oils are recommended. Olive oil may cause excessive smoking.

Once a patina covers the cooking surface very little oil will be necessary. For distinct sear lines, leave the food undisturbed on the surface for several minutes. If the food is moved too quickly the lines will be poor, and steam from the food may be released onto the surface.

Any food for grilling or searing must be quite dry before it is placed on the hot surface. Wet foods will not achieve good sear lines and may result in a steamed appearance and flavor. Use paper towels to pat off excess moisture from foods. Oil can then be brushed over the food if desired. Foods that have been marinated should also have excess moisture removed with paper towels.

Answer:	I've only delayed "planting" for about 10 days from when I received product to actual deployment - the instructions stressed to keep product absolutely dry as water "activates" the seed-mulch etc - since I live in San Francisco, I knew I couldn't keep it in the basement for long as the daily and nightly fog lead to dampness and condensation - but if I could keep the rolls in a dry place, like a linen closet without the linen, I SUSPECT the rolls could stay for months and be viable

Answer:	I have a glass cooktop stove and it work just fine. Seems to heat evenly.

Answer:	I have both. I like the "no sides" because you can turn food easily and is large enough for more hamburgers, hot dogs, etc. I like the "sides" because it is deeper and less splattering of oil on the stovetop. Both are great.
Question:	What is the weight of this pan? Trying to determine if it will be able to sit in my cabinet drawer designated for pans
Answer:	Hello. Our pan is in a cabinet in our garage so I won't be able to weigh it until tomorrow. We had it hanging from our pot rack for a long time, but needed the room. I will be happy to provide you with this info in the morning. Have a good evening.

Answer:	Yes it is! - That is the kind of range I currently have - and have used this multiple times on it with no ill effects to either the pan or the glass top electric range.

The black patina given to the cookware by the factory seasoning process is, in fact, vegetable oil that has been baked into a piece of cookware that has emerged from an individual sand mold. This coating of oil is a functional application and not a cosmetic application. The cookware is hanging as it rides through the electrostatic sprayer and commercial conveyer ovens at very high temperatures. This allows the oil to penetrate deeply into the pores of the iron which creates an easy release finish. As a result of this process, you may see a blister or bubble of oil at the southern-most point or at the end of the handle of the cookware piece. If visible, it will rub or flake off with your finger, leaving a brown spot. Don’t worry, it’s not rust but a seasoned spot that is brown, indicative of the varnish stage of seasoning. As a matter of fact, this is the color of home seasoned iron until it has been used several times. The brown spot will turn black with use.

Question:	Whith what OIL was it seasoned
Answer:	Our cast iron had been seasoned with Kosher Certified Palm Olein for years. We changed the seasoning to organic Flaxseed oil on the second half of 2017, which has had better results in testing, and skillets with that seasoning started hitting store shelves in August 2017. So both oils are vegetable oils baked at super high temperatures, but we just changed from Certified Kosher Palm Olein to Flaxseed, which is not certified Kosher. If you buy one today from Amazon, it'll be a flaxseed oil pan.

Answer:	No! Cast iron pan without porcelain enamel should never be placed in dishwasher.

Question:	Will it work on a glass topped electric stove
Answer:	I have an induction stove with a glass top and it works fine. I bought it specifically for my glass top since a regular cast iron pan is a bit rough on the bottom this is smooth and will not scratch my stove top. However, it is heavy I always use care setting it down on the stove I think it is heavy enough that if dropped it has a possibility to break the glass.
Question:	any one know of a cast iron or glass or even steel lid that fits on this skillet
Answer:	I have the Lodge Dutch Oven and I use the lid from this which fits the skillet. I would assume that you might be able to pick up a lid from Bed, Bath and Beyond because they sell individual lids.
Question:	What size dutch oven lid will fit the 11 inch cast iron enameled skillet and be safe to use
Answer:	I have a 11" enameled skillet and the lid from my 6qt enameled Dutch Oven fits it nicely

Victoria was founded in 1939. We are a three-generation family business located in Medellín, Colombia.
