Question: | For those that have had this set for MORE THAN ONE YEAR: Are they still working well? Still as non stick as day one |
Answer: | I have a set of the Original Scan Pans, which were only ever stick RESISTANT, and another set of ScanPan Generation 2, which were (and are) truly nonstick. I bought the second set about 10 or 12 years ago as a graduation gift for my son, and I have used them heavily since I had to move in with him 7 years ago due to health issues. You must clean them properly. If you use oil only occassionally, deglaze them whenever you've had oil in them. If you use it often, at least every other use. I deglaze mine every time I use them because there is always some oil in what I cook in the skillets. To` deglaze: Run the hottest water that will come out of your tap over the slightly cooled (but still hot) pan. If you have your hot water set low for safety reasons, boil some water in a tea pot and pour that over the pan in the sink.If you use cold water or even cool water, you risk warping the bottom of the pan. Mine have never warped but I use super hot water and my hot water heating is set high. I know one person who used to do this with cold water and eventually her fry pan (the shallower ones) did warp slightly. But it took years. The heavier duty skillets, I have never heard of one warping, but to be safe, use super hot water for this step.Refill with hot water, add a dollop of Dawn, and bring to a boil. It may foam and boil over so watch it. Let it cool and dump, wash out with more Dawn and a soft scrubby thing intended for nonstick coatings, dry and put it away.I've been doing this for over 20 years - didn't know about it until well into my first set of pans. And all my pans are still functioning well. The new ones are better - but they were an improvement over the originals to start with |
Question: | has anyone put it in dishwasher regularly |
Answer: | My teenagers clean the kitchen for me and this pan has been put in the dishwasher probably 3-4 times a week for the last 4 years. Last month, the surface on the bottom suddenly started sloughing off in a weird dramatic way and I had to throw the pan out. So yes... you can put it in the dishwasher, but I'm pretty sure it would have lasted another 4 years if I hadn't! For my family.. it's worth the trade off and I'm back to buy another pan. And realistically, we'll probably stick it in the dishwasher again. |

Answer: | CTX is a heavier higher grade pan. The best pan (non stick) I have ever used. |
Question: | Is the Scanpan CTX 8" cooking surface flat or a crown |
Answer: | The cooking surface is flat and the sides curve slightly. It is a wonderful pan. We have the 8 and 12 inch. |
Question: | what is the difference between the CTQ and the CTX nomenclature in these scanpans |
Answer: | The CTQ was developed by SurLaTable and they originally described the difference when they were only sold through their store as having a better handle and better glass lids. Since neither of those was important to me I bought the CTX through Amazon which was less expensive. |
Question: | Does it come with a lid |

User questions & answers
Question: | Can you confirm the height and width of the pan? I ordered one of these and when it arrived it was only a 4 quart pan. Thanks |
Answer: | You are right! I ordered the 5.5 quart pan and now, when I measure it, it is 12.5 inches in diameter and 2.25 inches high. When I calculate the quart size from the actual internal dimensions, it is only 4.78 quarts. More than 4 quarts but less than the advertised 5.5 quarts. I got misled like you did. Amazon needs to be aware that the size quoted is INCORRECT. How do we do that? |
Question: | Will this pan work on my induction glass top stove |
Answer: | Not this particular pan, but Scanpan does make a line of induction pans. If they make this pan in the induction version, buy it! I love this pan and it's my go to for lots of my cooking. Use it at least 4 or 5 times a week. Best pan brand that I have ever owned, no matter which pan you use. |
Question: | Is lid vented |
Answer: | Yes. 2 small holes. We love cooking with this pan! |
Question: | What is the difference between the "Pro IQ" and "Pro S5" models |
Answer: | Pro S5 is the latest line of cookware from ScanPan, and currently exclusive to Sur La Table. Pro IQ has been available for a few years, and is not exclusive to any one retailer. |
