Answer: I use it in the oven never tried it on the grill and I just use soap and water to clean it . But there are a few stains that I can’t remove which is fine by me.

Answer: This is not designed to take camping. It's a metal box with stone inserts in the oven chamber. In other words it's heavy and not designed for portability. I would be concerned about breaking the stones.

I read the product information as well as a lot of reviews when I bought the box and it seemed to me that the company recommendations against closing the lid where the kind of thing companies recommend given the potential problems from different grill configurations, careless users, etc. It absolutely does work and allows me to get another 100+ degrees in internal temperature. Now that I can get the box to a nose over 800 degrees (approaching Neapolitan pizza range) I have determined that the optimal temperature for charring and elasticity is in the 725-750 degree range. Like anything fueled by fossil fuels you need to be careful and pay attention, but I have done this 8-10 times now with no detrimental impact to the unit itself. Closing the lid was the difference between good and great pizza. BTW I'm using this with a Weber Genesis 4 burner (fourth "sear station" burner between burners 1 and 2) and I turn on all four burners. I had thought the unbalanced burner configuration might cause the left side of the box to get hotter, but according to my infrared thermometer that does not appear to be the case.

Question: Does it have a carry rack
Answer: I have to strongly disagree with the seller. I and my family (including children) have used racks with other stones for years and never had an issue. Peels are great if you have a elevated stove, but if you have to crouch down for a lower level oven they can become unstable and its a great recipe for a 425 degree pizza on the foot. Finding a rack from another brand in 16" has become a pain and I will have to basically throw away a competitors stone if I want to acquire one. All things considered I should have shopped more. I recommend you offer it as an option and let your customers decide.
Question: Can this be used to make pizza's using home made uncooked or unfrozen pizza dough? If so, how do you transfer to the stone
Answer: Yes, I make homemade pizza dough all of the time and sometimes I also buy the dough in the frozen section of the grocery. The trick is to make sure that it will slide off of whatever surface you are actually constructing the pizza on. I make my dough and then build the pizza entirely on a piece of parchment paper. I then slide the pizza with toppings on the parchment paper into the oven. Another way is to dust the work surface and the pizza stone with a little cornmeal so that that dough slides off nicely. Before I had a pizza peel, I slid the dough off and on the stone with a cookie sheet that had a flat edge on one side. It was an inexpensive way to manage the dough and I already had the baking sheet in my kitchen. There are a lot of ways to so this, just make sure to follow the recipes that Cast Elegance sends you and to read and follow the Use and Care instructions carefully. Question: Why does my pizza stick? I have pre heated each time as instructed
Answer: HiSticking will occur when:1/the stone is not hot enough, this is the main reason of sticking.In the convection oven without heating tubes, it will take longer to preheat. We advise you to turn on the top broiler and put the stone on top rack to preheat with the highest temperature of your oven. Maybe you can burn the stone on burner, and it will heat up much quickly. You can also use infrared thermometer to get the temperature. If the temperature lower than 450F, the pizza may won't have brown bottom, even turn out to be sticking. It's hard to tell the accurate preheating time of reaching that high temp because it always depend on the performance of the oven or grill. One hour probably not enough in some ovens which can't reach their indicated temp. Infrared thermometer will show you the right way.2/ the dough is too wet. For this, dusting some flour or cornmeal with your dough is useful, you can also put parchment paper on the stone to prevent sticking. see less
