Mandarin Stir-fry with Bird’s Eye Broccoli
Serves: 4-6 | Prep time: 10 min
Cooking time: 15 min | Total time: 25 min
Remove sauce packet from 1 package Mandarin Orange Crispy Chick’n and place packet in a bowl of hot water for 3 minutes to defrost. Empty into a bowl and stir in 1 tsp fresh grated ginger and ¼ tsp red pepper flakes. Set aside.
Preheat 2 Tbsp oil in a non stick frying pan over medium heat. Add frozen chick’n and saute, turning frequently, until golden and crispy, about 6 to 8 minutes. Remove to a plate.
In same frying pan, over medium heat, saute red pepper and broccoli for 1 minute. Add water, cover and steam until peppers are just soft and broccoli is bright green, about 2 minutes. Remove lid and stir in chick’n and sauce. Cook, stirring constantly, until warmed through and well coated in sauce.
Garnish with 1 Tbsp sesame seeds. Serve with steamed rice.
Chef Tip: This stir fry works well with all types of vegetables. Try thinly sliced carrot, bok choy and snow peas.

Quick and Easy Meatless Lasagna
Serves 8 | Prep time: 10 minutes
Cooking time: 30 min | Total time: 40 minutes
Preheat oven to 375º F. In a skillet, heat up 2 cups of the marinara sauce until simmering, then add 1 bag frozen Gardein beefless round. Add 1 additional cup of sauce and let simmer for about 3 minutes.
Meanwhile, in a medium size bowl, add 24 oz cottage cheese (or vegan option), 1 egg (or vegan option), 1 tsp oregano, 1 tsp basil, and about 1/4 cup of mozzarella (or vegan option) and stir together.
In a 13×9 pan, spread a thin layer of the sauce mix on the bottom of the pan, then lay 4 oven-ready noodles across, then a layer of cottage cheese mix, and sauce mix. Repeat this twice. On the final layer just add the remaining sauce mix (there wont be too much left, just a thin layer). Then top with the remaining layer of cheese.
Cover with foil and cook in the oven for about 25 minutes. Finish 5-10 minutes uncovered.

Answer: | There are 3 things I make with this a lot. They are all ovo-lacto vegetarian friendly as is. Burger patties: Mix 1 can burger with 1/2 C. finely chopped onion, 1 egg, 1/2 C. cracker (saltine) crumbs, 1/2 C. oatmeal. Form into patties and fry in a skillet, at a little less than medium heat, until crispy on the outside. Serve as a "steak" patty or as a burger on a good bun with whatever condiments you like. Keep the heat down as you fry these so you can be sure they cook through, the egg and onion are done, and the patties hold together when it's time to flip or eat them. Low and slow is best. Chopped bell pepper and/or celery are options. Casserole #1: Saute 1/2 C. chopped onion and 1/2 C. chopped celery until limp. Add burger and keep cooking till at least partially browned. Add rubbed or powdered sage to taste. Mix in 1 can of Cream of Mushroom soup thinned with about 1/2 C. evaporated milk or cream. Stir in about 8 oz. wide or extra wide egg noodles (No Yolks or any other substantial noodle you like is fine) that you've cooked until they're tender. In a 2-quart casserole dish with a lid, layer burger/noodle mixture and a generous quantity of shredded Cheddar and Monterrey Jack cheeses. Save at least 1/2 C. cheese(s) for the top. Cover. Bake in a 350 degree (F.) oven for 45 minutes. Remove cover and bake another 15-20 minutes until cheese is melted and bubbly. This recipe is about 50 years old and was originally called "Mock Chicken and Noodles" but it doesn't taste anything like real chicken and noodles, so don't expect it to. It is tasty, though. Casserole #2: Scrub a few Russet potatoes (enough to equal about 1 1/2 Cups when ground raw) until clean. Remove eyes or bad bruises. Peel 1 large onion. Cut potatoes and onion in wedges or chunks and run them through a food grinder together. Mix with 2 beaten eggs, 1 C. cream or evaporated milk, and 1/3 C. oil (I use olive oil). Place in a 2-quart greased baking dish, put the bay leaf on top, cover, and bake in a 375-degree (F.) oven for 45 minutes. Remove lid and bake another 10-15 minutes until the edges around the top are a bit crispy. Note: Adding the milk or cream to your mixing bowl first and stirring the potatoes and onion together with it will help keep the potatoes from darkening. Options: Celery powder to taste, ground or rubbed sage to taste, and salt to taste. I find all of the Loma Linda canned products to be salty enough without adding more salt, but suit your taste. You DO need to use a good old-fashioned food grinder for this. Grating or chopping the potatoes and onions or using a food processor will NOT get you the correct texture. |
