Answer: | Easy; Hybrid breeding. That is the way nature works. GMO is where humans force it in a laboratory and manually modify plants. Think of it this way: The traits in our popcorn were created in the field by breeding plant A (mom) with plant B (dad). GMO corn is akin to a test-tube baby.... born in a laboratory and forced to have certain genetics. |

Answer: | The "hull" is the outer layer which is called the pericarp. This part of the kernel is essential to the popcorn popping. It is very, very tough and acts like a protective outer barrier for the popcorn kernel which is just a popcorn seed. This tougher outer shell is essential to keep the seedling in good condition and protect the inner portions of the seed which contain starches to help the new plants grow quickly. Mother nature has very specific intentions on putting the hard outer shell on the seed. However, we use it for a different reason. The hull traps in moisture and when we apply heat, it causes a steam explosion which inverts the starch inside it makes it puff into popped popcorn. In this process, the outer hull is violently split and typically thrown away from the popped popcorn. You will find these at the bottom of the pan and sometimes attached to the popcorn. Shaking the popped popcorn helps to aid the detachment of any lingering hulls and let them sift out and fall to the bottom of the pan or bowl. In short, the hull is essential in some brands advertise that theirs is "hull-less". What they are really saying is that a variety of popcorn they sell has a very thin hull which typically shatters when it pops. This is not possible with mushroom variety popcorn due to the physics and genetics of the variety. |

Answer: | Of course! I am working on a video to show how. But, in short, you want to introduce the kernels to a lot of heat really quickly. So, in air popping, you want to run the air popper for a minute or two before you put your kernels in. That way they will pop great. Stove popping with oil is the same concept. Put the oil in the pan (I love olive oil) and turn the heat up to high. With a good oil with a high flash point, you really don't have to worry too much about burning the oil. Put 3 kernels in the oil and wait until they pop. Then, dump the rest of the kernels in. Keep agitating the pan by shaking it back and forth. You don't want the kernels to burn before they have a chance to pop. With the high heat, they would if you just leave them in the pan. Once they start to pop they will, likely, pop vigorously. Once popping slows, remove from heat. In my experience it seems like they all start popping at once and go for a bit and then taper off quickly. Keeping the pan moving during this time is the key to getting all the kernels to pop!!! You need to let gravity get the unpopped down to the heat source by agitating the pan. Answer: | No! Expect hulls. This variety is bred to pop large and in a mushroom shape. Therefore, it needs the hull, or Pericarp as it is technically called, to hold in and contain the moisture. This is important for popping and especially to achieve the large mushroom shape. The water inside the kernel heats up and turns to steam while the hull holds it in. When it no longer can, there is a steam explosion which "pops" the kernel and you get the popcorn. In this process, with proper popping conditions, the hull should split and fly off of the kernel. It doesn't always happen so you may see them. But, typically, they all fall to the bottom of the bowl and remain afterwards. I hope this answered your question. |
